As the days get shorter and the air gets cooler, there's nothing better than a hot bowl of steaming chili. But we now have an exciting variant of thatdiscovered:Pumpkin chili con carne. The autumnal pumpkin gives the minced meat and bean stew a whole new touch and is therefore perfect for cozy evenings at home. Particularly practical: The recipe is not only easy to prepare, it is also perfect forPre-cookand spoils you with delicious leftovers for a few days. This makes it ideal as a meal prep recipe or assimple main course for many guests.
Easy to make, delicious to eat: This is how pumpkin chili con carne works
Ingredients for 8 servings
- 350g pumpkin
- 1 large onion
- 2 tomatoes
- 4 cloves of garlic
- 1 root Paprika
- 3 tbsp olive oil
- 700 g minced beef
- 250 ml beef broth
- 230 g chopped tomatoes
- 90 g tomato paste
- 250 g pumpkin puree (see below)
- 425 g canned kidney beans (drained)
- 425 g canned white beans (drained)
- 1 tsp chili powder (to taste)
- 2 tsp paprika (sweet)
- 2 tsp cumin
- 1 tbsp sugar
- 1 teaspoon dried oregano
- Salt, pepper
preparation
- Halve the pumpkin, remove the seeds, cut off the peel and cut into small cubes. Peel the onion and garlic and dice finely, wash, clean and dice the peppers and tomatoes. Make sure that the pieces are cut as evenly as possible.
- Heat the oil in a large pot over medium heat, first sauté the onion until translucent, then add the peppers and pumpkin. After a few minutes add the tomato pieces. Finally add the garlic. Cook everything until the vegetables are soft.
- Push the vegetables to the edge of the pot and fry the minced meat in the middle of the pot, breaking it up with a spoon and allowing it to brown.
- Once the meat is mostly browned, stir in the spices, broth, pumpkin puree, chopped tomatoes, tomato paste, and beans.
- Bring the chili mixture to the boil and then reduce the heat. Close the pot with a lid, but leave a gap open for the steam.
- Simmer the chili for about 1.5 to 2 hours, stirring occasionally. After about half the cooking time, remove the lid completely.
- To serve, pour into bowls and drizzle with sour cream if desired.
Tipp:You can find pumpkin puree in well-stocked supermarkets or as baby food in the drugstore. Alternatively, you can roast an appropriate amount of pumpkin in the oven and then puree it.
