    Taste experience: Fluffy potato noodles with spicy sauce

    Ingredients (4 servings)

    • 500 g floury potatoes
    • 300-350 g potato flour
    • 1 tsp salt

    Ingredients for the peanut sriracha sauce

    • 2 heaped tablespoons of peanut butter
    • 1 tbsp tomato paste
    • 2 tbsp tamari (or soy sauce)
    • 1 tablespoon maple syrup
    • 1 THE Srirachasoße
    • 1-2 tbsp sesame oil

    Preparation:

    1. First, peel the potatoes and boil them in lightly salted water until soft. While still hot, press through a potato press or mash finely.
    2. Mix the puree well with salt and gradually with potato flour until you have a smooth dough. If it is still too sticky, just add a little more potato flour.
    3. On a lightly floured work surface, shape the dough into rolls - they should be about ten to twelve centimeters long and one to two centimeters thick. Then roll these into even sausages (about four millimeters in diameter).
    4. Now put a test noodle in boiling water and take it out again after about three minutes. If it is too soft or falls apart, the dough needs even more starch. If the consistency is right, add all the noodles to the salted, boiling water until they rise to the surface. Then remove with a slotted spoon.
    5. To make the sauce, heat the sesame oil in a large pan and add all the ingredients. Stir until a homogeneous sauce forms. Let it simmer gently while stirring constantly and add a little more water if necessary. The sauce should be smooth and creamy.
    6. Finally, the finished potato noodles are added to the pan and tossed until the sauce is evenly distributed. Then serve and enjoy.
