Christmas recipe: pink, roasted chocolate almonds
The delicious almonds taste great as a sweet snack or as a topping on ice cream and dessert. Also great: Packed in pretty bags and given away as a small gift.
Ingredients:

- 150g sugar
- 1 pinch ground vanilla
- 1 pinch of salt
- 150g almonds
- 100g white vegan chocolate
- 50g powdered sugar
- 2 tsp pitahaya powder (or other fruit powder)

Recipe for pink Christmas almonds – this is how it works:
1. Line a tray with baking paper.
2. Pour 80 ml of water into a shallow pan. Dissolve the sugar, vanilla and salt in it and bring everything to the boil. Add the almonds and simmer over medium heat until the water has evaporated and the sugar becomes crumbly. Then keep stirring and wait. The sugar begins to melt and coats the almonds. (Be careful not to burn it!)
3. Place the caramelized almonds on the baking paper and pull them apart with a fork so that they don't stick to each other.
4. Melt the chocolate in a water bath and toss the almonds in it.
5. Mix powdered sugar and pitahaya powder and place in a sealable container. Add the almonds and shake so that they are evenly powdered on all sides.
6. Pour everything onto the baking paper again and let it dry. Then put it in a sealable jar.
