Feel-good recipe: protein-rich spinach potato casserole with eggs

Would you like to try something new in the kitchen again? Then you are exactly right with this soul food recipe! Potatoes, spinach, eggs and cheese complement each other and ensure that the casserole prepared as a jerking. Try it out and convince yourself - it's that easy:

Ingredients for 4 people

  • 620 g potatoes (cooked, peeled)
  • 650 G TK-Spinat
  • 4 owner
  • 2 shallots
  • 1 clove of garlic
  • 240 ml Sahne
  • 25 g Margarine
  • 125 g grated cheese (e.g. Gouda or Edamer)
  • 1 pinch of nutmeg
  • Salt
  • Pfeffer

preparation

  1. Preheat the oven to 180 degrees top/bottom heat.
  2. Peel the garlic and the shallots and dice them.
  3. Heat a pan, put in the margarine and braise the garlic together with the shallots. Then add the spinach and steam everything over a low heat with the lid closed until the spinach is thawed.
  4. Place about 2/3 of the cream in the pan and taste everything with salt, pepper and nutmeg. Let it steep for 2-3 minutes.
  5. Cut the potatoes into slices and put them in a greased baking dish so that the entire floor is covered. Spread the spinach mass evenly on the potatoes, then press four hollows into the spinach with a spoon and add a raw egg in each other.
  6. Pour the remaining cream over the spinach and generously distribute the cheese over everything. Then put the spinach potato casserole in the oven and bake for 20-30 minutes, depending on how the consistency of the eggs should be.

Tipp:Instead of a large baking dish, you can also use four small casserole shapes and serve the feel-good recipe in it directly.
