Especially those who pay particular attention to their diet in order to get rid of annoying pounds or to fuel their muscles even better, usually avoid the sinful treats from the Christmas bakery. But that's over now!
Yes, you read that right! The renunciation is over. The low carb expert Jasmin Mengele specializes in sugar-free and low-carbohydrate nutrition. Here we present three recipes from her for particularly delicious – and light – Christmas cookies that will make the hearts of all those with a secret sweet tooth beat faster.
What is the difference between traditional and low carb Christmas cookies?
1. Low-carb cookies: recipe for tender vanilla crescents

You need (for approx. 60 crescents / 2 trays):
- 250 gMandelmehl, fills
- 200 g Butter
- 125 g ground almonds
- 3 egg yolks
- 150 gXylitol
- 1 vanilla bean
- 1 Msp. Backpulver
- 50 gPowdery mildewor SukrinMelis, for sprinkling
And this is how it works:
Preheat oven to 180 degrees. Line two baking trays with baking paper. Put all the ingredients in a bowl and mix with the mixer to form a smooth dough.
Use a teaspoon to scoop out small portions of dough and form vanilla crescents. Form a ball between your palms and then into a roll. Then bend it into the shape of a half moon with your fingers on the tray. Bake for 10 minutes at 180 degrees top and bottom heat.
In the meantime, chop xylitol in a blender until the grain size corresponds to that of powdered sugar or use SukrinMelis. Allow the crescents to cool slightly, then roll them in the powdered xylitol and pack them in a tin.
2. Low-carb cookies: recipe for spicy gingerbread

You need (for approx. 20 pieces):
- 600 g ground hazelnuts
- 6 eggs size L
- 500 g Xylit
- 200 g chopped almonds
- 1 packet of gingerbread spice
- 5g cinnamon
- 1/2 teaspoon baking powder or deer horn salt
For the glaze
- 50 g Butter
- 300g 85% chocolate
And this is how it works:
Preheat the oven to 180 degrees top and bottom heat. Line two baking trays with baking paper. Put all ingredients in a bowl and mix with a mixer.
Take a lime-sized amount of the dough and form it into a ball between your hands. Place the ball on the baking paper and press it flat. Bake the gingerbread for 20 minutes at 180 degrees top and bottom heat. Allow to cool slightly before glazing.
To make the glaze, warm the chocolate with butter and spread it over the gingerbread cookies.

3. Low-carb cookies: recipe for airy coconut macaroons

You need (for approx. 40 macarons):
- 100 g xucker (erythritol, xylitol or other sweetener)
- 3 egg whites (size M)
- 250 grams of desiccated coconut
And this is how it works:
Preheat oven to 180 degrees. Beat the egg whites into egg whites. While stirring, gradually drizzle the sugar into the egg whites until it dissolves. Fold in grated coconut. Let stand for five minutes so that the coconut flakes soften and bind slightly.
Using a teaspoon and, if necessary, a little help from your fingers, place small heaps on a baking tray lined with baking paper. Bake at 180 degrees for 10 minutes until the tops are lightly brown.
