Noodle salad in other words: We do not need a mayonnaise for our recipe. Instead, we use pesto, rocket and mushrooms.

Noodle salad with pesto and caramelized walnuts

I prefer to use a walnut-Ricotta pesto for my pasta salad, which is nice and creamy and not as oily as a classic pesto Rosso. But of course you can also take a Mediterranean pesto Calabrese or try it all with a green pesto!

Ingredients for approx. 6 portions:

  • 500 g nudeln (z. B. Farfalle)
  • 4–5 dried tomatoes (in oil)
  • 200 g Mushrooms
  • 1 The Dill
  • 80 g Rucola
  • Salt and pepper
  • 1 teaspoon garlic powder
  • 2 away

For the caramelized walnuts

  • 100 g Walnuskers
  • 50 g of sugar
  • 50 ml of water

For the sauce

  • 2 El Pesto (z. B. Walnuss-Ricotta)
  • 2–3 tablespoons of herb curd (alternatively neutral yogurt)
  • 1 the Mayonnaise

And this is how it works:

1. First cook the noodles according to the package instructions in plenty of salt water al dente. Drain and set aside to cool down.

2. In the meantime we prepare the mushrooms. To do this, clean the mushrooms and cut into thin slices. Heat some oil in a pan and fry the mushrooms in it crispy. Season with salt, pepper and a little garlic powder.

3. Bring the walnuts to the boil with sugar and water in a pan, then reduce the heat. Stir the walnut nuclei again and again so that they are covered with the sugar mixture from all sides. As soon as the wateralmost completely evaporatedis, let the walnuts cool on baking paper. Then roughly chop with a sharp knife.

4. Wash the rocket salad and spin dry (the easiest way to do with a salad linger is,Like this from Amazon*). Take the tomatoes out of the oil and cut them into small pieces, finely chop the dill (of course you can also take Dill out of the TK).

5. Now mix everything together: pasta, tomatoes, dill, mushrooms and walnuts. Mix the sauce and add, mix everything well and season with salt and pepper. Finally fold in the fresh arugula - and the (probably) tastiest pasta salad in the world is ready!
