Our low-carb pancakes are made without any flour, but with quark and vanilla pudding powder. The recipe is here.

What kind of pancakes do you like best, the thin ones that resemble crepes or the fluffy American pancakes? I like both, but the thin pancakes have a very special place in my heart.

I lived in the Netherlands for eight years, and if there's one thing the Dutch love, it's Pannenkoeken! There are even entire restaurants there that only serve these thin pancakes - sweet and savory.

Recipe for delicious pancakes without flour

Ingredients for approx. 8 pieces:

  • 4 Owner (Gr. M)
  • 60 ml milk
  • 200 g low-fat quark
  • 2 heaped tablespoons of vanilla pudding powder
  • 1 pack vanilla sugar
  • 1 pinch of salt
  • Some sunflower oil or clarified butter for frying

And this is how it works:

1. Put all the ingredients in a bowl and mix with a whisk to form a smooth dough.

2. A little clarified butter or sunflower oil in a coated pan (like this one from Amazon*) heat. Pour in the dough in portions and fry until golden brown on both sides.

3. The low-carb pancakes are best enjoyed warm. They taste good plain or with powdered sugar, a pinch of cinnamon, jam or fresh berries.
