First of all, Christmas is coming up, of course, but it's not very long until New Year's Eve. And that's where this soup comes in handy. It's quick, really filling and uses ingredients that you probably have in the fridge anyway. Here comes the simple but ingenious recipe.

Midnight soup: quick recipe

The ingredients for the midnight soup come together quickly. In just a few simple steps you can conjure up a dish that both young and old will enjoy.

Thanks to its uncomplicated preparation, the soup can be prepared hours in advance and then eaten at midnight when hunger returns.

You need these ingredients for 6 servings:

  • 1kg ground beef
  • 250g onions
  • 3 peppers of different colors
  • 1 can chopped tomatoes (800 g)
  • 1 Dose Kidneybohnen (800 g)
  • 1 small Dose Corn (ca. 150 g)
  • 250 ml instant beef stock
  • 3 cloves of garlic
  • 500 ml pureed tomatoes
  • Some salt
  • A pinch of cayenne pepper
  • Chili powder to taste

Preparation:

1.Fry the minced meat and sliced ​​onions in portions in a large pot. Wash, clean and cut the peppers into cubes. Add to the minced meat mixture.

2.Briefly rinse the kidney beans and let them drain. Drain the corn and add it to the remaining ingredients in the large pot along with the beans and the chunky canned tomatoes.

Tipp:The midnight soup also tastes great if a few potatoes are added now.

3.Mix the beef broth according to the instructions on the package, add it to the other ingredients and simmer everything over medium heat for about 45 minutes until the vegetables are nice and soft. Then press in the garlic.

4.Finally add the pureed tomatoes, season to taste and bring to the boil again. Serve with bread – done!
