Crispy Mutzenblätter: Recipe for the traditional carnival biscuits

If you are looking for traditional fat biscuits in the foolish season, you should not miss this treat. Whether a small carnival fan or big Jeck - you all make you happy with crispy covers.

Lard biscuits simply belong to carnival. At the jecken season, the bakeries are full of a wide variety of greasy treats: from Berliner to Mutzemen.

Every year I am particularly looking forward to the Rheinische Mutzen, which are not to be confused with the fluffy murder. Mutzen, or mutton leaves, are diamond -shaped dough plates that are baked in hot fat golden yellow. Then the crispy carnival biscuits are sprinkled with a decent load of powdered sugar. Sounds delicious? Is it too! This is where the recipe comes.

Carnival recipe: make mutton leaves yourself

Not only do you make it for the carnival season after the delicious fat biscuits? How good that you do not have to wait until the crispy Mutzen leaves can be bought again from the baker. With this recipe you can easily do it yourself.

Ingredients for approx. 30 pieces:

  • 250 g Mehl
  • 2 owner
  • 100 ml Sahne
  • 50 g of sugar
  • 1 pinch of salt
  • Abriting of a organic lemon
  • Optional: a shot rum
  • Plant oil for frying
  • Powdered sugar for dusting

This is how you succeed in the Mutzen:

1. First beat the eggs until frothy with the sugar. Then add the cream, salt and lemon abrasion. Finally, sieve the flour and knead into a dough. Strike this in cling film and put it in the fridge for at least half an hour.

2. Then roll out the dough thinly on a floured work surface (approx. 1 cm thick) and cut into diamonds with a knife or dough girl (this gives the typical jagged edges) into diamonds.

3. Heat the oil to 175 degrees in a saucepan. As soon as it throws blister on a dipped wooden spoon, it is hot enough. For safety, you can also measure the temperature with a kitchen thermometer (is available here at Amazon*).

4. Let the cut -out dough slide into the hot fat and bake in it until golden brown on both sides. But don't leave them in it too long, otherwise they will be very dry. Then drain on kitchen paper.

5. Finally, sprinkle and enjoy the still lukewarm caps from both sides with powdered sugar.

Tip: The delicious carnival biscuits tastes best when it is freshly prepared. You can prepare the raw dough well and store in the fridge overnight.
