Make your own eggnog pralines: A sweet surprise filled with alcohol and white chocolate

  • 30 g butter, unsalted
  • 1 tsp lemon juice
  • 2 tsp eggnog or an eggnog flavoring paste without alcohol
  • 200 g white chocolate for the filling and more
  • 300 g white chocolate coating
  • pinch of salt

1. Put the cream cheese, butter and salt in a small saucepan and heat it up. However, do not bring them to a boil.

2. Crumble the white chocolate.

3. When the butter has melted and you see steam, add the 200g chocolate and remove the pan from the heat. Let the chocolate melt for 2 minutes. Pour the lemon juice and eggnog into the pot. Chill the mixture for at least three hours.

4. Line a baking tray with baking paper. Take the mixture out of the fridge in portions. Use a teaspoon to portion the mixture. It is best to shape the chocolates with your hands.

5. To coat, it is best to melt the chocolate coating in a water bath.Dip the chocolatesone at a time in the chocolate coating and roll them in it. The chocolates should be completely covered with the chocolate coating.

6. Decorate the chocolates as desired, for example with edible gold leaf.

You can also prepare the chocolates in the Thermomix. For this purpose, use the mixing bowl and chop the chocolate at level 6 for 3-4 seconds. Then add the remaining products (except eggnog and lemon juice) and melt the mixture for 2-3 minutes on level 2. Then add the liqueur and mix for a few seconds on level 4. Then pour the mixture into a suitable container and store them in the refrigerator overnight. The next day, put the couverture in the mixing bowl and let it melt for about 4 minutes on level 2. Then take the liqueur mixture out of the fridge and shape it into pralines. Cover with the chocolate coating and chill again.

How long do homemade chocolates last?

The eggnog pralines should be stored cool, in an airtight container. Then they can be kept for up to 10 days. If you want to give the chocolates as a gift, it is best to keep them in the refrigerator. Write the validity on the box so the recipient knows.
