For this crusted ham recipe, it is best to use a pre-cooked ham so that it can be prepared more quickly. The spicy salsa gives the dish an exotic taste.
Ingredients:
- 1/3 cup fresh tarragon leaves, chopped
- 1/4 cup mustard with mustard seeds
- 1/4 cup fresh parsley, chopped
- 2 garlic cloves, pressed
- Pfeffer
- 3.5 kg of fully cooked ham with crust
- 1 medium ripe pineapple
- 2 EL Limonensaft
- 1 spring onion, sliced
Crusted ham recipe– Preparation
- Preheat oven to 160 degrees. Place a tablespoon of tarragon in a medium bowl for the salsa. Set aside. In a small bowl, mix together the remaining tarragon, mustard, parsley, garlic and 1/2 teaspoon pepper.
- Place the ham on a rack and place it in a fireproof drip tray (approx. 43 x 30 cm). Dab the ham with kitchen paper. Spread the ham with the mustard mixture. Cover the ham with aluminum foil and place in the oven for 2 hours (or until a thermometer registers 60 degrees in the center of the ham, but without touching the bone).
For thePineapple salsa: Cut off the crown and bottom of the pineapple. Remove the bark. Quarter lengthwise and remove the core from all pieces. Cut each quarter into 1cm pieces (you will need 4 cups). The rest can be stored in the refrigerator. Place the pineapple pieces in the bowl with the tarragon, add the lime juice and spring onion and mix. You get about 4 cups of salsa. Place covered in the refrigerator until the ham is ready. Serve the pineapple salsa with the ham.
