  • 1/4 tsp ground cloves

To garnish:

  • 2-3 crumbled whole wheat biscuits

Preparation:

  • Place pumpkin puree, condensed milk, 50 ml cream, sugar, cinnamon, nutmeg and cloves in a medium-sized saucepan and heat over medium heat. Simmer for 5 minutes.
  • Transfer the mixture to a mixing bowl, allow to cool completely, and cover with plastic wrap. Place in the refrigerator for 2 to 4 hours.
  • Once the pumpkin mixture has cooled, add the remaining cream to a mixing bowl and beat until stiff peaks form, 3 to 5 minutes.
  • Gently fold all but one cup of the whipped cream into the pumpkin mixture until fully incorporated.
  • Fill the mousse about 2/3 full into the glasses and place in the refrigerator for at least 3 to 4 hours.

Preparation steps:

  • Roughly chop a whole bar of dark chocolate and place it in a large bowl. Pour in the hot coffee and stir until the chocolate has melted. Then stir in 4 tablespoons bourbon (if using).

Preparation:

  • Finely crumble the whole wheat biscuits in the food processor. Mix the crumbs with the melted butter, 2 tablespoons sugar and salt. Place about 2 tablespoons of the crumbs into 8 glasses and press to form the base. Set aside.
  • In a chilled mixing bowl, stir together the cream and powdered sugar. Beat the cream on medium speed until it thickens, about 3-5 minutes. The whipped cream is ready when it forms soft peaks and can hold its shape.
