Bake muffins with figs for a special kind of dessert
You can replace goat's cheese with sheep's cheese and, if you want, you can also add walnuts or flaked almonds. The recipe can be varied wonderfully, so you can experiment a little. Are these two cheeses too spicy for you? Then just use feta!

You need these ingredients
- 75g fresh figs, cut into cubes
- 6 whole figs
- 170 g Honig + 1 EL
- 240 g Flour
- 1 THE Backpulver
- 1 TL Natron
- ½ tsp sea salt
- 45g brown sugar
- 2 Owner
- 120 ml milk
- 1 TL Vanilleextrakt
- 60 g goat cheese, crumbled

How to prepare the muffins with figs, goat cheese and honey
Preheat the oven to 200 degrees and line a muffin tin with paper liners.
- In a bowl, mix the fig pieces with a tablespoon of honey and set aside.
- Mix together the flour, baking powder, baking soda and salt.
- In a separate bowl, mix the brown sugar, remaining honey, eggs, milk and vanilla together well.
- Now add this liquid mixture to the flour mixture and mix everything together well, but without mixing for too long.
- Carefully fold in the sweetened fig pieces and the cheese.
- Distribute the finished muffin batter into the prepared pans.
- Halve the whole figs and place one half in each mold. Just press them lightly into the dough.
Tipp: You can also slice the figs and top the muffins that way (e.g. 1 to 3 slices per cake). In this case you need less than 6 pieces. - Bake the cakes until golden brown, 12 to 15 minutes. Use a toothpick to test whether the dough is cooked through.
