Stracciatella cake: Simple recipe for the loaf pan and with frosting or no-bake cheesecake

Everyone loves it as ice cream and it is no less delicious as a cake - stracciatella, a combination of a vanilla base (milk ice cream or vanilla dough in the cake version) and delicious chocolate chips pampers the senses and goes well with absolutely any occasion (or no occasion at all). So you can try out both variants for the stracciatella cake.

Stracciatella cake from the loaf pan – quick and easy recipe

A simple sponge cake is probably the quickest way to make a delicious cake. Just stir it together,into the box shapeAdd and bake – you have a great dessert. To make the stracciatella cake juicy, you can also add chopped almonds or coconut flakes as desired. If the baked dessert has dried out, pierce it with a wooden stick and drizzle it with juice or cocoa. This is how it is done:

  • 200g sugar
  • 200 g soft butter
  • 220 g flour, sifted
  • 4 Owner
  • 75g chocolate chips
  • 1 tsp baking powder
  • 1 pack vanilla sugar
  • 1 pinch of salt
  • optionally chocolate icing (couverture)

Preheat the oven to 180 degrees and grease a loaf tin.

  • Beat the butter together with the sugar and vanilla sugar in a bowl for 2 minutes until creamy.
  • Gradually stir in the eggs.
  • Add flour and salt.
  • Fold in the chocolate chips.
  • Pour the dough into the mold.
  • Bake for one hour. You can test whether the stracciatella cake is ready using a toothpick test.
  • Melt the couverture in a water bath.
  • Remove the cake from the tin and drizzle with the melted chocolate on a serving plate.

Stracciatella frosting recipe

Instead of the chocolate icing you can also use a suitable oneFrosting with cream cheeseprepare for the stracciatella cake. How about this delicious variant:

  • 200 g cream cheese
  • 150g powdered sugar
  • 75g soft butter
  • 1 TL Vanilleextrakt
  • 100 g chocolate chips

Mix the cream cheese with the powdered sugar, butter and vanilla. Once there are no more lumps, carefully fold in the chocolate chips. As soon as the stracciatella cake has cooled and just before serving, spread the top thickly with the frosting.

For the floor:

  • 180 g chocolate biscuits, finely crumbled
  • 60g melted butter

For the cream:

  • 400 g soft cream cheese
  • 90 g powdered sugar, sifted
  • 1 TL Vanilleextrakt
  • 190 ml Sahne (35 %)
  • 60 ml milk
  • 1 THE Gelatinepowder
  • 100 g chopped chocolate or ready-made chocolate chips

For the marble effect glaze:

  • 30 g dark chocolate, chopped
  • 2 tbsp whipped cream

Stracciatella cake recipes – preparation

  • Mix the melted butter and crumbled cookies.
  • Press the mixture into a springform pan (18 cm) and place it in the freezer for 30 minutes.
  • In a bowl, beat the cream cheese until creamy and stir in the powdered sugar and vanilla.
  • In a separate bowl, whip the cream until stiff and then add it to the cream cheese. Don't stir for too long.
  • Add the gelatin to the milk and let it soak for 5 minutes.
  • Heat both in the microwave and mix the ingredients together well until the gelatine has dissolved.
  • Add the mixture to the cream cheese, mix well and fold in the chocolate chips.
  • Spread the cream on the floor.
  • Melt the chocolate in the cream in a double boiler, pour the icing here and there onto the cream cheese cream and create swirls with a chopstick for the marble look.
  • Refrigerate the stracciatella cake overnight or for 12 hours.
