You need these ingredients for the buffers

  • 2 medium zucchini
  • 1 teaspoon salt
  • 2 Owner
  • 2 cloves garlic, crushed or minced
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 80 g panko breadcrumbs or breadcrumbs (or for gluten-free variant 60 g oat flour)

Preparation steps

Wash the zucchini, cut off the end and grate coarsely. Don't peel.

Add two tablespoons of olive oil to a large nonstick skillet and heat to medium-high heat.

Add the buffer dough into the hot oil with a spoon. Add about 2 tablespoons per piece and flatten with a spatula.

Sauté until the bottom is golden brown, 2 to 5 minutes. Then turn and fry the other side for another 2-3 minutes until golden brown, without pressing with the spatula.

The zucchini fritters become very crispy in the pan.

Variant 2: Prepare in the oven

To prepare in the oven, line a baking tray with baking paper and grease with olive oil.

Preheat the oven to 200 °C fan oven.

Place two tablespoons of dough per buffer on the tray and press down lightly. Brush the laid out thalers with olive oil.

Bake the zucchini fritters with feta for about 20 minutes, turning them halfway through if necessary.

When prepared in the oven, the pancakes are not as crispy, but they are healthier.
