Only 5 ingredients – this is what you need:
- 1.5kg chicken
- 2 Becher Zaziki (400 g)
- 2 lemons
- 4 onions (red and white mixed)
- 300 g Basmati rice
- olive oil, salt, pepper

And this is how the Mediterranean dish works:
- Prepare and marinate chicken: Cut the chicken along the backbone and open it up. Rub generously with half of the tzatziki, the juice of half a lemon, salt and pepper. Cover and marinate in the refrigerator for at least 2 hours, preferably overnight.
- Baking and preparing: Preheat the oven to 180°C. Peel the onions and chop half of them finely, mix with lemon juice and salt. Quarter the remaining onions and arrange in a large pan along with the lemon halves and the marinated chicken (skin side up). Drizzle with a little olive oil and roast until the meat is tender, about 70 minutes.
- Process lemons and onions: Set the chicken aside, squeeze a lemon half and add the juice to the pan. Cut the remaining onions and lemon peel into strips and add them back to the pan.
- Cook rice and serve: Cook rice with 600 ml salted water on the stove until tender. Arrange the rice on a serving platter, place the chicken on top and garnish with onions, remaining tzatziki and a drizzle of olive oil. Serve with the onion marinade.
