Pumpkin cake with cream cheese frosting: the recipe
Ingredients
- 400 g pumpkin puree ()
- 4 Owner
- 100g brown sugar
- 50g white sugar
- 120g vegetable oil
- 2 TL Vanilleextrakt
- 200 g Flour
- 2 tsp cinnamon
- 1/4 TL
- 1/4 tsp grated nutmeg
- 1/4 tsp Cardamom (ground)
- 1 packet of baking powder
- 1/2 TL Natron
- 250 g soft butter
- 4 tablespoons maple syrup
- 1 tbsp Vanilla extract
- 50g powdered sugar
- 300 g cream cheese
preparation
- Oven on180 °C top/bottom heatpreheat. Line a rectangular baking pan with baking paper.
- In a large mixing bowl, mix the pumpkin puree with the eggs, white and brown sugar, vanilla extract and vegetable oil until smooth.
- In a second bowl thisMix with the spices (cinnamon, salt, nutmeg, cardamom) as well as baking powder and baking soda. Then quickly stir the flour mixture into the pumpkin mixture until all the ingredients are just combined.
- Now pour the dough into the prepared baking pan and place in the preheated oven for approxBake for 30 to 35 minutes.To make sure the cake is ready, do a stick test: If no more dough sticks to the stick, the cake is perfect.
- While the cake is cooling, it's time to make the cream cheese frosting: Cream the butter until it takes on an almost white color. Add maple syrup, vanilla extract and powdered sugar and mix well. Finally, stir in the cream cheese until you get a smooth cream.
- Spread the frosting evenly over the completely cooled cake.
Optionally, the finished cake can be sprinkled with a pinchCinnamonand/orpumpkin seedsbe decorated. Crunchy walnuts also make a good topping.
