Recipe for heavenly Burgenland apricot cookies

Ingredients for 50 pieces:

For the shortcrust pastry

  • 300 g Flour
  • 100g sugar
  • 1 pinch of salt
  • 200 g kalte Butter
  • 1 No (M)

  • 3 egg whites (M)
  • Salt
  • 200g sugar
  • 270 g apricot fruit spread without pieces

Preparation:

1. For the shortcrust pastry, mix the flour, sugar and salt in a bowl. Add butter in pieces and egg. First use the dough hook of the hand mixer, then quickly knead with your hands to form a smooth dough. Wrap in foil and chill for about 30 minutes.

2. Roll out the dough on a floured work surface to a thickness of approx. 3 mm. Flower-shaped (approx. 6 cm ø,Buy cookie cutter here on Amazon*) cut out. Spread on 3 baking trays lined with baking paper.

3. Beat the egg whites with a pinch of salt until stiff, while adding the sugar. Continue beating until the sugar has dissolved. Fill into a piping bag fitted with a small star nozzle and pipe dots onto the edges of the biscuits.

4. Bake one after the other in the preheated oven (electric stove 180 °C, fan oven: 160 °C, gas: level 2) for approx. 12 minutes, remove and let cool.

5. Heat fruit spread. Using a spoon, carefully spread into the hollows of the cookies. Let the cookies dry.
