Would you like a change from the classic cheese and leek soup? Then you have to try our minced meat and cheese soup with tomatoes: hearty, creamy and fruity at the same time!
Is it cold and uncomfortable outside? Then it's high time for a hearty soup!
Because it's so quick and easy to make - and always tastes good - I like to cook a delicious cheese and leek soup. So that the same ingredients don't always end up in my soup pot, I've modified the classic a little. And tada – the minced cheese soup with tomatoes was born.

Recipe for a quick minced cheese soup with tomatoes
Fruity tomatoes, spicy minced meat and creamy melted cheese: this dish simply makes your heart melt! While the fried minced meat makes you feel full, the tomato-cheesy stock just makes you happy. Be sure to try it out!
You need these ingredients for four portions:
- 1 onion
- 2 cloves of garlic
- 2 Paprika, root
- 2 EL Kill
- 400g mixed minced meat
- 600 ml beef stock or vegetable stock
- 1 can of tomatoes, chopped
- 200 g processed cheese
- 4 tbsp sour cream
- Salt, pepper
- Paprika powder, sweet
- Garlic, granulated
- Fresh parsley, chopped
And this is how the preparation works:
1. First peel the onion and garlic, then chop both finely. Wash the peppers, remove the greens and the core and cut the flesh into strips.
2. Put oil in a soup pot and heat it up, then fry the minced meat in it. Once crumbly, add the onions. Sauté these until translucent, then add the garlic and paprika. After about three minutes, deglaze everything with the stock and let the contents of the pot simmer for ten minutes.
3. In the next step, the canned tomatoes can also be poured and stirred in. Let the whole thing simmer over medium heat for a quarter of an hour.
4. Now stir in the processed cheese until it has dissolved in the stock. Then sour cream can be added to the top. Bring everything to the boil once. Season the soup with the spices indicated and divide the soup among four plates. Sprinkle with fresh, chopped parsley – done!
