If you pay attention to your diet and therefore reduce sugar or live low carb, you don't have to miss out on enjoyment. Here comes our simple recipe for an airy yogurt cake.

Do you want to eat healthier in the new year? Less sugar, fewer carbohydrates and ideally without gluten? Avoiding carbohydrates is no longer an exception. Because many people eat these days.

How practical that this is no longer the same as doing without! With the right recipes you can make a delicious pastry - as this yogurt cake without flour and sugar impressively proves.

Recipe for a yogurt cake without flour and without sugar

Instead of sugar, we use xylitol for this quick yogurt cake. No idea what exactly xylitol is? This is a certain sugar alcohol (E 967), also known as birch sugar, and is used as a sugar substitute.

Xylitol has around 40 percent fewer calories than conventional table sugar, although its sweetness is comparable. It has almost 240 calories per 100 g. Larger amounts of xylitol (as little as 20 to 30 g) can also lead to digestive disorders such as flatulence and diarrhea.

So – no matter how delicious our yogurt cake without flour and sugar may be: please don’t eat it all at once!

Ingredients for 8 pieces (springform pan, 20 cm diameter):

  • 4 Owner
  • 70 g xylitol (optionally replace 1:1 with sugar)
  • 1 vanilla bean
  • 1 organic lemon
  • 350 g yogurt, Greek
  • 40 g pudding powder, vanilla
  • 1 TL Weinsteinbackpulver
  • if desired: powdered sugar to decorate

Approximately per serving:

  • 124 kcal
  • 7 g Fett
  • 6 g of carbohydrates
  • 8g protein

And this is how it's done:

1. First carefully separate the four eggs from each other. Beat the egg whites with a hand mixer until foamy - then mix the egg yolks with the xylitol (you can get it here on Amazon*) whisk.

2. Scrape out the pulp of a vanilla pod, grate the peel of the organic lemon - add both to the egg yolk mixture along with the Greek yogurt.

3. Mix the pudding powder and baking powder, then add them together to the mixture and mix everything together.

4. Last but not least, carefully fold the egg whites into the other ingredients until a uniform dough is formed.

5. Open the oven170 degrees top/bottom heatPreheat (150 degrees circulating air). Either grease a springform pan or line it with baking paper. Pour the dough into the mold and spread it out.

Tipp:Mix a few berries into the dough or put them on the cake after baking - this will make the whole thing immediately fruity.

6. Let the cake bake for 30 minutes, then remove it from the oven, turn it out and let it cool. Optionally dust with powdered sugar.
