Quick recipe for a hearty Viking pot
For the meatballs I always use mixed minced meat because it stays juicier after cooking in the stew. However, it also tastes simply delicious with beef.
Ingredients for approx. 4 servings:
- 4 potatoes
- 3 carrots
- 500 g minced meat (mixed)
- 1 tsp paprika (smoked)
- Salt & Pepper
- 1 tsp mustard
- 1 onion
- 1 clove of garlic
- 1.25 EL Mehl
- 250 ml meat broth
- 200 ml Sahne
- 75 g processed cheese
- 3 sprigs of parsley
And this is how it works:
1. Peel the potatoes and cut them into bite-sized pieces. Then place directly in hot, salted water and bring to the boil. Also peel the carrots and cut them into cubes. When the potato pieces are almost cooked, add the carrots to the water and cook briefly. Then drain both through a sieve and rinse with cold water.
2. Season the minced meat with paprika powder, salt, pepper and mustard and form about 18 small balls out of it. Fry these in a pan over medium heat on all sides and remove.
3. Peel the onion and garlic, chop finely and sauté in the same pan until they are translucent. Now add the pre-cooked potatoes and carrots, dust everything with the flour and continue to sweat briefly. Then deglaze with the meat stock and cream and bring everything to the boil. Season with salt and pepper.
4. Then add the processed cheese to the pan and stir until it has dissolved. Now put the meatballs back in the pan and let everything simmer for 15 to 20 minutes. Finally, pick a little parsley, chop it and sprinkle it on top. Bon appetit!
