What many people cannot miss on Christmas Eve: potato salad with sausages. Here you will find the classic recipe like Grandma's.
Oh yes – potato salad. The entire grilling season wouldn't be complete without it. But on Christmas Eve too, for many people it replaces the Christmas goose with red cabbage along with sausages.
Fortunately, there are what feels like a million different recipes that always provide variety on the buffets and plates. Today we're serving you a real classic: Bohemian potato salad - just like your favorite grandma's!

Bohemian potato salad with mayo & meat sausage: Hearty, hearty
Ever heard of the Mayo Equator? This means an invisible, geographical border. We're more fans of limitless love - but fortunately the difference that prevails here is relatively harmless.
Oh well. At least that applies to everyone who hasn't had to roll their eyes and listen to their quirky relatives at the family party (swinging the spatula menacingly!) with an Aperol Spritz in their hand as they argue about whether the perfect potato salad should be made with mayo or without.

I don't want to go into it any further - I think both versions are great and worth eating. Where exactly the equator in question runs along is somehow not entirely clear. But the fact is that the version with mayo is more likely to be prepared in the north, the version with oil and vinegar or with broth is more likely to be prepared in the south. Germany, of course. The Bohemian potato salad has its origins in the Czech Republic - and we know that our Polish and Czech neighbors like to have mayo salads.
This is also the case in the Bohemian potato salad, which gets its incomparable flavor from meat sausage, spices and (drumroll) apple. A phenomenal combination that you shouldn't miss.
Ingredients for approx. 8 servings:
- 1 kilogram potatoes (waxy)
- 500 grams of meat sausage
- 4 pickles
- 1 small apple
- 1 onion
- 100 grams of peas
- 100 Gramm Mayonnaise
- 40 milliliters of vegetable broth
- Salt, pepper
- fresh dill or parsley (for decoration)
And this is how it works:
1. Boil the potatoes, still unpeeled, in a pot full of salted water. Ideally the evening before they are prepared, then they can be processed further without having to cool down first. Peel the cooked potatoes and cut them into small cubes.
2. Remove the sausage from the skin and cut into equally small cubes. Chop the pickled cucumber. Remove the core and peel from the apple and chop the flesh. Peel and chop the onion.
3. Place the potato, sausage, cucumber, apple, onion and peas in a salad bowl and carefully mix together.
4. Mix mayonnaise with the broth and season with enough salt and pepper. Add the sauce to the ingredients in the bowl and fold in carefully. Adjust seasoning if necessary, garnish with herbs – and enjoy!
