Lasagna without regrets: The low carb version with kohlrabi

Our low carb lasagna offers few carbohydrates, but a lot of taste.

Lasagna is actually always good and for every occasion. If it weren't for the great effort involved in preparing it and the remarkable combination of carbohydrate-containing pasta sheets and fatty cheese. But for everyone who loves lasagne as much as we do and is looking for a low-carb version with little effort, we have the right recipe.

Let's be honest: It's actually the combination of delicious pasta, hearty sauce and creamy cheese that makes our hearts beat faster for lasagna. But with our ingenious lasagna variant, we simply replace the lasagne sheets with healthy kohlrabi slices and promise you: This doesn't affect the taste.

If you don't like kohlrabi, you can also replace the vegetables with zucchini strips. Otherwise, the lasagna is prepared as usual. You can make a spicy tomato sauce with minced meat according to your taste.

Our recipe also works without a heavy béchamel sauce. For this we use a light curd cream. The kohlrabi in our recipe is not only an ingenious low-carbohydrate substitute for the lasagna sheets, but also adds a very special touch thanks to its slightly sweet cabbage aroma.

Kohlrabi lasagna: Simple recipe from the oven

You need these ingredients:

  • 4 Kohlrabi
  • 2 onions
  • 2 tomatoes
  • 2 tbsp olive oil
  • 400 g minced meat, mixed
  • 1 tbsp tomato paste
  • 1 can of pizza tomatoes
  • Salt
  • Pfeffer
  • 150 ml milk
  • 300 g herb quark
  • 100 g gratin cheese, grated

And this is how easy it is to prepare:

1. Peel the kohlrabi and cut into thin slices. Peel the onions and cut them into cubes. Wash the tomatoes and cut them into slices.

2. Now cook the kohlrabi slices in a pot of boiling salted water until al dente (about 8-10 minutes, depending on the thickness).

3. Heat some olive oil in a pan and sauté the onions. Add the minced meat to the pan and fry. Now stir in the tomato paste and pizza tomatoes and let the sauce simmer for a few minutes. Then season with salt and pepper.

4. Stir the milk into the herb quark until it is nice and creamy.

5. Now the bottom of a baking dish (You can find a suitable casserole dish here on Amazon*) spread with the minced meat sauce. Then spread some kohlrabi slices on top and spread everything with the curd mixture.

6. Now spread the minced meat sauce and half of the tomato slices on top again. Then cover with kohlrabi slices again and continue layering until all the ingredients have been used up.

7. The last layer of lasagna should be minced meat sauce. Sprinkle these with the grated cheese and place in the preheated oven(to 200 °C top and bottom heat)approximately 25 minutesbake.
