If it's rainy and uncomfortable outside, the desire increasesand stews. What could be better than a tasty kohlrabi soup with minced meat that not only warms the soul but is also wonderfully filling?
The combination of slightly sweet kohlrabi and hearty minced meat is simply incomparably delicious. And the best thing about it: This wonderful family dish is ideal for anyone on a low-carb diet.
Low-carb kohlrabi soup with mince: favorite recipe in winter
Who ever said that a filling, heavenly delicious dish would necessarily require a lot of ingredients? In this recipe, the incomparably aromatic, slightly sweet taste is teased out of the kohlrabi in a very short time while cooking, which goes perfectly with the seasoning of the minced meat. You'll want to clean up the entire contents of the pot all by yourself!
Tipp:You don't eat meat? You can also use vegetarian or vegan “mince”. Fry them separately and then sprinkle them over the soup.
You need these ingredients for 4 servings:
- 600 g kohlrabi, without greens
- 1 carrot
- 3 stalks of spring onion
- 2 EL Kill
- 600 ml vegetable broth
- 200 g minced meat, mixed
- Salt, pepper
- 300 ml whipping cream (or light cream)
- Nutmeg, grated
- fresh herbs, for garnish
And this is how the preparation works:
1. First we prepare the vegetables. To do this, peel the kohlrabi and cut it into cubes. Peel the carrot and cut into slices. Peel the spring onions, remove the ends and cut the rest into rings.
2. Heat 1 tablespoon of oil in a soup pot and sauté spring onions for about three minutes. Add the kohlrabi and carrots and roast for a few minutes, then deglaze everything with the vegetable broth. Let the soup simmer over a low heat with the lid closed for about 15 minutes.
3. Meanwhile, season the minced meat with salt and pepper and knead well. Heat the remaining oil in a pan and fry the minced meat until crumbly. Remove from the flame for now.
4. For the garnish, scoop a few vegetables out of the broth with a slotted spoon and set aside.
5. Take a hand blender and puree the soup, then add the cream, fried minced meat and the filling to the soup. Heat over a low flame while stirring. Season the soup with salt, pepper and grated nutmeg, stir in fresh herbs - and enjoy!
