We let the summer vacation dream of the winter cold on the beach of Mallorca. At the same time, the soup is really ideal for the current cold period. Recipe for Spanish tomato garlic soup
Tradidionally, SOPA de Ajo is not pureed, but served as a hearty soup with garlic and bread insert. Since not everyone tastes of the softened bread in the soup, the soup on Mallorca is often pureed and refined with tomatoes. Plus a few crispy croutons - you can already spoon away.
Ingredients for 4 portions:
- 20 cloves of garlic
- 4 slices of toast bread
- 400 g of shaped tomatoes (from the can)
- 1 l vegetable broth
- 5 tablespoons of olive oil
- 1 Lorbeerblatt
- 1 teaspoon dried oregano
- 2 TL paprika powder (smoking)
- Salt
- OPTIONAL: 2 Owner
For homemade croutons
- 2 slices of old -fashioned bread
- 1 tablespoon of olive oil
- Salt
So the soup is prepared:
1. First, the 20 cloves of garlic must be peeled and quartered.Tip so that it works faster:Fill several cloves of garlic into a screw -top glass, turn the lid and shake vigorously until the shell has loosened.
2. Cut the toasted bread into cubes and heat olive oil in a large saucepan. Roast the bread and the garlic for a few minutes while stirring. Add the paprika powder, mix well, then stir in the spacious tomatoes and pour in the broth.
3. Add Oreegano and the bay leaf. Boil the soup, reduce the heat a little and for approx.20 minutesLet simmer.
4. In the meantime, prepare the croutons. The best way to use bread from the previous day is. Cut this into cubes. Heat the olive oil in a pan and stir in chopped herbs such as rosemary or thyme on request. Then add the bread and roast under swiveling, season with salt and set aside.
5. Now remove the bay leaf from the soup and with a hand blender (Order here at Amazon*) Puree and taste with salt. Optional: Beat two eggs in a small bowl and whisk with a fork. Slowly pour the mixture into the soup, stir and simmer for two minutes.
6. Spread the garlic soup on bowls, sprinkle with the croutons and serve warm. Baguette and shrimp skewers go well with this.
