This is what you need (for 4 glasses):

For the cream:

  • 500 g Sugar
  • 1 EL Honig

For the apple compote:

  • 2 large apples (e.g. Boskoop or Elstar)
  • 1 tbsp honey (alternatively erythritol for a low-carb version)
  • 2 tbsp water
  • 1 pinch of cinnamon (optional)

To garnish:

  • 1 apple
  • chopped walnuts

This is how it's done:

  1. Prepare apple compote: Wash, peel (optional) and core the apples. Then cut into small cubes. Place apple pieces with honey, water and cinnamon in a small saucepan and simmer over medium heat for about 15-20 minutes until the apples are soft and a compote-like consistency is formed. If necessary, you can mash the mixture lightly or leave it chunky. Let the compote cool down.
  2. Prepare cream: Mix the skyr with the honey until smooth.
  3. Arrange dessert: Divide the apple compote evenly between the glasses and pour the Skyr cream over it. Wash the remaining apple, core it and cut it into fine wedges. Arrange the apple slices decoratively on the dessert and sprinkle with chopped walnuts.
