Raw eggs can be kept for 28 days from the day on which the hen laid the egg. If you store the eggs in the fridge from the second week, you can use them for about three weeks after the official expiry date.

Swimming test
The older the egg, the greater the air chamber inside. To determine the freshness of your eggs, you can therefore fill a glass with water and let the egg slide in.
- A fresh egg remains on the bottom of the glass.
- If the egg is diagonally in the water or straightens up, it is an older egg. Heated it well with consumption.
- If the egg swims on the surface, it is over 28 days old. The best thing to do is to use the striking test and your sense of smell to determine whether the egg is still okay.
