Easter cake recipe-bake a coconut cake in rabbit form

This effective Easter cake recipe with coconut and pineapple will ensure a little variety and fits perfectly with Easter because it has a nice rabbit shape. We offer you two variants of the cake - share with a rabbit template or the round cake in the middle and glue the two halves and decorate so that they are resembled in the grass.

Ingredients fFor the cake:

  • 2 1/2 cups of flour
  • 2 1/2 tsp baking powder
  • 1 teaspoon salt
  • 1/4 cup of finished (or homemade) coconut cream
  • 225 g of pineapple compote, in the juice
  • 1 tbsp vanilla extract
  • 1 1/2 cups of sugar
  • 1/2 cup of soft butter or margarine
  • 3 big eggs

Coconut Butter Glaze:

  • 3/4 cup of sugar
  • 1/2 cup of flour
  • 1 cup of coconut cream
  • 2 The Kokoscreme
  • 2 TL Vanilleextrakt
  • 1 cup of unsalted, soft butter

For the decoration:

  • 2 2/3 cups or 200 g sweetened coconut flashing
  • 2 rosafarbene mandeldraged
  • 1 blue jelly bean
  • 1 red, heart -shaped sugar decoration for cakes
  • 2 x Lackritzschnur (ca. 5 cm lang)

Prepare the rabbit with template

Preparation for the Easterhasen cake:

  1. Preheat the oven to 175 degrees. Getting and flouring a baking pan (33 x 22 cm).

  5. Put the finished dough in the prepared baking pan and bake for 25-30 minutes (toothpick sample). Let it cool for 10 minutes, take it out of the mold and let it cool completely.
  6. The coconut butter glaze: mix the sugar and flour in a saucepan. Gradually stir in the coconut cream. Bring to the boil over medium heat until thick. Stir more often. Cook for 2 minutes with constant stirring on low heat. Take off the hob, stir in the vanilla extract and let it cool.
  7. In a large bowl with the mixer on a medium level, beat the butter until frothy, gradually add the coconut cream.
  8. After the cake is completely cooled, place on a cake plate. Cut the ears and the body of the rabbit with the help of a knife and the stencil. Crumble the superfluous parts and sprinkle on the tail and ears so that they become higher. Brush the cake with the glaze at the top and on the sides and sprinkle with coconut flipping. Slightly press the coconut ribs. Decorate the ears of the rabbit with dragées, the eye with the jelly bean and the mouth with the sugar heart. Use the liquorice for the mustache. Your bunny Easter cake is ready.
