Ingredients:
- 1 medium head of cauliflower
- 3 tbsp extra virgin olive oil
- 2-3 tbsp grated Parmesan cheese
- 3 cloves of garlic, coarsely chopped
- 1 1/2 tsp Paprika
- 3/4 tsp salt
- 1/2 tsp ground pepper
- Juice of 1/2 lemon
- 2 tbsp finely chopped fresh parsley
Preparation:
- Place a large, rimmed baking sheet on the middle rack of the oven and preheat the oven to 450°F.
- Cut the cauliflower into florets and place them in a large bowl. Mix them with olive oil, garlic, paprika, salt and pepper.
- Spread the cauliflower on a preheated baking sheet. Arrange the florets in a single layer so that each individual floret is well toasted. Bake for 25 minutes, turning once after 15 minutes, until lightly toasted and tender.
- Sprinkle the Parmesan cheese over the cauliflower and return it to the oven for another 2 to 3 minutes.
- Add the lemon juice and fresh parsley and serve the dish.

Ingredients:
- 1 head of cauliflower, cleaned and cut into 1.5 cm thick slices
- 2 tbsp extra virgin olive oil
- 1/2 tsp salt
- 1 tsp Italian seasoning
- 1/2 tsp freshly ground pepper
- 220 g marinara sauce (or other tomato sauce)
- 25g freshly grated Parmesan, divided
- 220 g grated mozzarella cheese
- 1 tbsp chopped basil
- 1/2 tsp crushed red pepper flakes
Preparation:
- Place the cauliflower core side down, cut it in half and divide it in half. By cutting the core, the florets stay together.
- Preheat the oven to 220°C. Place the cauliflower steaks in a single layer on a rimmed baking sheet and brush both sides of the vegetable steaks with olive oil. Season them with salt and pepper.
- Bake, turning once, until the cauliflower is tender and golden, about 30-35 minutes.
- Remove from oven and brush each steak with marinara sauce. Then sprinkle them with the grated mozzarella and half of the Parmesan.
- Turn the oven on to the “grill” position and grill the cauliflower steaks until the cheese is bubbly and golden, about 3 minutes.
- Serve the roasted cauliflower sprinkled with the remaining Parmesan cheese, chopped basil leaves and red pepper flakes.

Ingredients:
- 3 chicken breasts
- 1 cauliflower (thickly sliced)
- 1/2 tsp salt
- 1/2 TL Pfeffer
- 1 tsp red chili flakes
- 250 g tomato sauce
- 1 tsp garlic powder
- 30 g Parmesan cheese, grated
- 1 tsp onion powder
- 1 tbsp olive oil
- 120 g mozzarella cheese, grated
- 1 tbsp fresh chopped basil or parsley
Preparation:
- In a shallow bowl, combine the garlic powder, onion powder, chili flakes, salt and pepper. Add the chicken breasts to the spice mixture and coat each breast evenly. Let them rest while you prepare the cauliflower.
- Preheat the oven to 220°C. Place the cauliflower steaks in a single layer on a rimmed baking sheet and brush both sides with olive oil. Season them with salt and pepper.
- Bake the cauliflower for about 10-15 minutes, turning once. Remove from the oven and brush each cauliflower steak with half of the tomato sauce. Place the seasoned chicken breasts on top of the steaks and pour the remaining tomato sauce over them. Sprinkle each chicken breast with 2 tablespoons Parmesan cheese and grated mozzarella cheese. Sprinkle more Parmesan on top if desired.
