Strawberry season is the best time of year to try a strawberry tiramisu recipe. This quick and easy no-bake dessert is perfect for any occasion and always gets rave reviews.

In this article we offer you not one, but three recipes. The first is for strawberry tiramisu with mascarpone and cream. The second is a vegan strawberry tiramisu recipe with rhubarb. The third variant is a Raffaello tiramisu without cookies - a great dessert with strawberries for the coming summer.

Strawberry tiramisu recipe with mascarpone and cream

First, the strawberries are cleaned. Here's how to do it correctly so that the taste of the fruit is best preserved:

How to clean strawberries properly

  1. Leave the stem on the strawberries when washing them. This means the strawberries will absorb less water (make sure you never submerge the strawberries in water).
  2. Place the strawberries in a large sieve.
  3. Rinse the fruit under cold water.
  4. Gently move it with your hand to remove any dirt.
  5. Dry them with a paper towel.

Preparing the ingredients for the strawberry tiramisu

Ingredients for the strawberry juice:

  • 2 cups chopped strawberries (330 g)
  • 1 teaspoon lemon juice
  • 1 tablespoon sugar
  • 1/2 cup cold water (120 grams)

Instructions for preparing strawberry juice:Wash the strawberries, cut them into small pieces and sprinkle with sugar. Then add the strawberries, lemon juice and water to a blender and puree until smooth.

Ingredients for the strawberry tiramisu cream:

  • 1 pasteurized egg (optional)
  • 225 g Mascarpone
  • 1 1/2 tablespoons powdered sugar (sifted)
  • about 30 Italian biscotti
  • 220 grams full-fat cream
  • 170 grams of sliced ​​strawberries

Instructions for preparing the cream: In a medium bowl, whisk together the egg (if using), sugar, mascarpone and cream until it forms a nice, creamy mixture (about 5 minutes, so it's neither too thick nor too thin).

Making dessert with strawberries

Pour half of the strawberry juice into a small bowl and dip the cookies in it, tossing to thoroughly coat both sides but not submerging them in the juice. Then take a baking pan (26 x 17 cm) and spread the cookies on the base. Cover with half the cream and add the sliced ​​strawberries. Repeat the process with the cookies and spread the remaining cream on top.

Place in the fridge for at least 4-5 hours or even overnight. Garnish with fresh strawberries before serving. Have fun!

Vegan strawberry tiramisu recipe with rhubarb

This recipe is a twist on the classic, butin a vegan version, with a fruity layer of strawberries and rhubarb. In this way, the tiramisu achieves a beautiful harmony between the tartness of the rhubarb and the sweetness of the first sun-drenched strawberries.

What do you need for this vegan strawberry tiramisu recipe

Instead of store-bought cookies, this strawberry tiramisu recipe offers you a way to bake the base for your vegan dessert yourself. It consists of only a few ingredients and is very easy to prepare. The cream is a mixture of vegan ricotta, cottage cheese and soy cream. It becomes fluffy and creamy. In between there is a layer of rhubarb compote and fresh strawberries - heavenly, right?The perfect summer dessert.

Ingredients for the rhubarb compote:

  • 300 g rhubarb, alternatively strawberries
  • Water
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla extract

Directions:Simmer for 10-15 minutes until the rhubarb is soft and falling apart slightly.

Ingredients for the base:

  • 75 ml soy milk or other plant milk
  • 200 ml carbonated water
  • 100 g raw cane sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon apple cider vinegar
  • Zest of 1 lemon
  • 250 g spelled flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda

Directions:Mix the flour, sugar, baking powder and baking soda in a bowl, add the wet ingredients and work into a smooth dough. Place in a greased or parchment paper-lined square baking pan (approx. 20 x 30 cm) and bake for 20 minutes - check with a toothpick whether it is well baked.

Ingredients for the cream:

  • 120 g vegan ricotta
  • 150 g vegan cottage cheese
  • 2 tablespoons lemon juice
  • 75g powdered sugar
  • 300 ml soy cream that can be whipped
  • 200g strawberries

Directions:Beat the soy cream until stiff and carefully fold it into the ricotta and curd mixture.

Preparation of the vegan dessert

  1. Cut the strawberries into slices.
  2. Cut the cooled sponge cake in half horizontally and place one half in a baking dish (approx. 20 x 30 cm). Cover with half of the compote and place the strawberry slices on top.
  3. Then add half of the cream.
  4. Repeat the process with the second half of the sponge cake dough, finish with cream and sprinkle the tiramisu with strawberry powder/cocoa.
  5. Place in the refrigerator for 4-6 hours

A notice:You can also just use strawberries for this recipe. Make a compote with it (same amount as rhubarb) and use it fresh.

Raffaello tiramisu – dessert with strawberries and without cookies (optional)

And since we can't decide what we love more, tiramisu or Raffaello candies, we'll end this post with a dessert that combines both. There are no biscuits or biscotti in this recipe, the crunch comes from the crushed candies. However, if you wish, you can add these to your taste, arranging them first at the bottom of the glass and then again between the cream and the fruit.

Ingredients:

  • 500 g Mascarpone
  • 500 g low-fat cottage cheese
  • 330 ml coconut milk
  • 1 box of Raffaello candies (23 pieces)
  • 200 ml whipped cream
  • 1 tablespoon coconut syrup or coconut liqueur
  • 500g strawberries, fresh or frozen
  • Caster sugar (optional)

Directions:Wash and clean the fresh strawberries. Mash the Raffaello candies in a bowl with a fork and mix with the low-fat cottage cheese and coconut milk. In a second bowl, mix the mascarpone with the mixer until creamy and stir it into the above mixture spoon by spoon with the whisk. Sweeten slightly with powdered sugar and a spoonful of coconut syrup or coconut liqueur.

Finally, fold the whipped cream into the mixture. Pour the cream into a glass bowl. Puree the thawed or fresh strawberries and spread them over the cream. Refrigerate for at least an hour before eating.
