- About 12 ladyfingers
- 4 Owner
- 450 Gramm Mascarpone
- Approximately 1 kilogram of fresh strawberries
- 200 grams of granulated sugar
- 50 ml strong, cold espresso
- Depending on your taste, 2-3 tablespoons of Amaretto liqueur
Preparation:
- First, clean half of the strawberries and puree them finely with the hand blender. Cut the remaining strawberries into slices.
- Put the puree with 2 tablespoons of sugar in a saucepan and simmer over medium heat for about 5-7 minutes until the sauce thickens.
- Remove from heat and allow to cool to room temperature.
- Separate the egg whites and yolks and beat the yolks with 150 grams of sugar at low speed for 5-7 minutes until a creamy white mixture is formed.
- Next, beat the egg whites with the remaining sugar until stiff.
- Slowly incorporate the mascarpone into the egg yolk mixture and stir gently with a wooden spoon until smooth.
- Now slowly fold in the egg whites and mix everything until smooth.
- Break a ladyfingers into small pieces and place in the glass as the first layer. Drizzle with a shot of espresso.
- Then pour in some strawberry puree and spread strawberry pieces on top. Cover with mascarpone cream.
- Repeat the above step for the second layer and place the strawberry tiramisu in the glass in the refrigerator for at least 1 hour.
- Decorate with some fresh strawberries and fresh mint and serve!

- 60 ml almond milk
- 80 grams of almond cream or soy cream
- 1 pack of vanilla sugar
- 30 ml strong espresso
Preparation:
- Cut 100 grams of strawberries into small pieces, put them in a blender and puree them into a fine sauce.
- Rinse and drain the cashew nuts. Add to the blender with the almond milk and puree until smooth - this is your vegan mascarpone.

- 4 eggs, separated
- 55 grams of coconut flour

- A pinch of salt

- 230 grams of whipped cream
- 30 grams of powder erythritol

Preparation:
- For the sauce, cut the strawberries into small pieces and put them in a small pot with the remaining ingredients. Simmer over medium heat for 5 minutes, stirring constantly.
- Remove from heat and let cool.
- For the low carb biscuits, preheat the oven to 180 degrees.
- Mix the butter with the erythritol until creamy. Add the egg yolk and vanilla extract and beat everything well.
- Add coconut flour, salt and baking powder and mix well.
- In a separate bowl, beat the egg whites until stiff and carefully add them to the egg yolk mixture.
