Stuffed potatoes with minced meat and cheese

Ingredients for 4 servings:

  • 4 large potatoes, waxy
  • 400 grams of ground beef
  • 1 medium onion, chopped finely
  • 2 cloves of garlic, finely chopped
  • 30 grams of tomato paste
  • 200 grams of diced canned tomatoes
  • 100 ml beef broth
  • 300 grams frozen vegetable mix (carrots, peas and corn)
  • 150 grams of cheddar cheese, grated
  • Salt and pepper

Preparation:

  • Preheat oven to 200 degrees.
  • Rinse the potatoes thoroughly with water and pat dry with kitchen paper.
  • Hollow out the potatoes with a fork, place them in a baking dish and pour the broth over them.
  • Cook for 15-20 minutes.
  • Meanwhile, heat some olive oil in a large skillet over medium-high heat.
  • Sauté the garlic and onions in it for 1-2 minutes.
  • Add the minced meat and fry for 4-5 minutes, stirring constantly.
  • Add tomato paste, diced tomatoes and vegetable stock to the pan and simmer for 4-5 minutes.
  • Add frozen vegetables and potato meat and cook for another 3-4 minutes.
  • Fill the pre-cooked potatoes with the minced meat mixture, sprinkle with cheddar cheese and bake for 20-25 minutes.
  • And your stuffed potatoes with minced meat and cheese are ready!

Baked potatoes with bacon and cheese

Fried potatoes with bacon is a timeless classic of German cuisine, but if you like to experiment like we do, then you should try this recipe for stuffed potatoes with bacon and cheese as soon as possible!

Ingredients for 4 servings:

  • 4 large potatoes, waxy
  • 60 grams bacon, finely diced
  • 200 grams of sour cream or cream cheese
  • 120 grams of cheddar cheese
  • 40 Gramm Butter
  • 1 bunch of spring onions, cut into rings

Preparation:

  • Preheat the oven to 200 degrees and line a baking tray with baking paper.
  • Place potatoes on baking sheet and bake for 1 hour or until tender. Alternatively, you can cook the potatoes in boiling salted water for 10-15 minutes.
  • Then cut the potatoes in half lengthways and scoop out the flesh.
  • Mix the potato flesh with butter, sour cream, bacon and spring onions in a large bowl and stuff the potatoes with it.
  • Sprinkle with cheddar cheese and bake for 30-35 minutes.

Ingredients for 4 servings:

  • 4 large potatoes, waxy
  • 100 grams of Kasar (Turkish cheese)
  • 1 red onion
  • 1 piece of sucuk, Turkish sausage
  • 130 grams of canned corn kernels or sweetcorn
  • 20 grams Ketchup or Mayonnaise
  • Some red coleslaw
  • olive oil
  • 20 Gramm Butter
  • Salt and pepper

Preparation:

  • Preheat the oven to 200 degrees and wash the potatoes thoroughly.
  • Prick the potatoes several times with a fork, wrap in aluminum foil and bake for 60-65 minutes.
  • In the meantime, heat 1-2 olive oil in a large pan over medium heat and briefly fry the sausage.
  • Add onions and fry for 3-4 minutes. Remove the pan from the heat and allow to cool slightly.
  • Slice the potatoes lengthwise in the middle and scoop out the insides of the potatoes.
  • Mix the potato flesh, butter and cheese in a bowl to make a puree.
  • Stuff potatoes with the sucuk mixture, mashed potatoes, sweet corn and coleslaw.
  • Finally, garnish with ketchup or mayonnaise (or both) and your Turkish-style stuffed potatoes are ready!

Stuffed potatoes with feta and olives

  • Bake for 50-55 minutes and let cool slightly.
  • In the meantime, mix the low-fat quark, butter and milk for the filling in a bowl until smooth and season with salt and pepper.
