If you want to make your own vegetable stock from leftovers, cut the vegetable scraps into small pieces, put them in a large freezer bag and store them in the freezer until you have filled 2-3 bags. If you use herb stems, cut them too small and place them in a separate freezer bag. Also, dry them separately in the oven as these will cook quicker. - Preheat the oven to 90°C.
