Italian Pasta Salad – A tasty recipe with Tuscan-style tortellini

This Italian pasta salad encompasses everything you might like about food from Tuscany. The ultimate advantage of this dish is that you can serve it warm or chilled. That sounds very practical, right? Not to mention that the dish is completely flexible when it comes to the ingredients used.

We've only tried this recipe before, but we've since tweaked it based on our favorite Tuscan flavors. It's not like that's actually why we were there, but with a few simple steps, this pasta treat is easy to make. Let summer come to your home and invite your friends over for dinner.

So how can you prepare a pasta dish like this? An Italian pasta salad is part of the Tuscan charm. For the best consistency, we would recommend making the salad no more than a day in advance. Since the tortellini tend to absorb a lot of the salad dressing while it cools, we also recommend making a little extra. It is also recommended to stir the salad well before serving to distribute the sun-dried tomato oil.

Use different pasta

Of course, you can use various pastas in this recipe. The best type of noodles for such dishes are those made with lots of nooks and crannies so that the dressing can fully penetrate every bite. Farfalle and Fusilli are also very suitable choices in this regard.

Ingredients

  • 400 g tortellini with cream cheese
  • 60 ml virgin olive oil
  • ½ EL Balsamic-Essig
  • ½ EL Honig
  • black pepper to taste
  • 200g chopped salami or prosciutto ham
  • 150 g baby spinach
  • 1 pinch of salt or to taste
  • 150g sun-dried tomatoes
  • 100 g freshly grated Parmesan cheese

preparation

  1. First, boil water in a pot while sprinkling a teaspoon of salt over it.
  2. Insert the tortellini and cook according to the package instructions. When the pasta is ready, drain it in a large bowl using a suitable sieve.
  3. To mix the dressing, use a separate glass to combine olive oil, balsamic vinegar and honey. Then season the salad dressing with salt and pepper.
  4. Then add prosciutto or salami (or both), spinach, sun-dried tomatoes and the dressing to the bowl.
  5. Mix everything together and garnish with freshly grated Parmesan cheese.
