With the temperatures rising outside, we were craving a light and refreshing dessert for dessert. Today we're skipping the oven and treating ourselves to a piece of delicious no-bake yogurt cake with our coffee! With berries, limes or low-carb - these recipes provide a real taste explosion and are guaranteed to become the whole family's new favorite. So what are you waiting for? Ingredients base:
- 200 grams of butter biscuits
- 50 grams of fine oat flakes
- 80 grams butter, melted
Yoghurt cream:
- 500 grams of Greek yogurt
- 200 grams of cream cheese
- 200 grams of cream
- 50 grams of granulated sugar
- 6 gelatin sheets
- 1 TL Vanilleextrakt
Berry topping:
- 300 grams of berries of your choice, it tastes particularly delicious with strawberries or raspberries
- 20 grams of sugar
- 1 tbsp freshly squeezed lemon juice
Preparation:
- For the topping, put the berries in a small pot and bring to the boil with the sugar and lemon juice.
- Reduce heat and simmer for 4-5 minutes, stirring occasionally.
- Remove the pot from the heat and puree the mixture with the hand blender into a smooth cream. Set aside and let cool.
- Put the ingredients for the base in a blender and process into a sticky mass.
- Line a 23 cm diameter springform pan with baking paper and spread the base evenly.
- Place the springform pan in the refrigerator.
- Pour cold water over the gelatine leaves in a small bowl and soak for 6-7 minutes.
- Meanwhile, place yogurt, cream cheese, sugar and vanilla extract in a large bowl and beat with a whisk until smooth.
- Add about 3/4 of the berry sauce to the yogurt mixture and stir well.
- Beat the cream in a separate bowl with a hand mixer for 3-4 minutes until stiff.
- Squeeze out the gelatine leaves and heat gently in a saucepan over low heat.
- Remove the pot from the heat and add about 2-3 tablespoons of yoghurt mixture.
- Mix well and add to the remaining yogurt mixture.
- Slowly fold in the cream and stir until smooth.
- Spread the mixture evenly over the floor and smooth it out.
- Pour the remaining berry sauce over it and make small swirls with a fork.
- Place in the refrigerator for at least 4 hours or overnight.
- Before serving, garnish with fresh fruit if you like and voilà – your berry yogurt cake is ready without baking!
Lime tart with yogurt without baking
Beautifully light, refreshing and sour-creamy – this no-bake lime yoghurt cake is pure enjoymentthe perfect dessertfor the sunny spring days!
Ingredients for the base:
- 200 grams of butter biscuits
- 80 grams butter, melted
- 1 TL Vanilleextrakt
Yoghurt cream:
- 200 grams of Greek yogurt
- 400 grams of cream cheese
- 2 packs of gelatin or 8 sheets of gelatin
- 100 ml freshly squeezed lime juice
- 100 grams of sugar
- 1 pack of vanilla sugar
- The grated zest of 2 limes
Preparation:
- For the base, finely chop the shortbread biscuits either with a rolling pin or in a mixer.
- Mix the shortbread cookies, melted butter and vanilla extract in a bowl to form a sticky mixture.
- Line a 20 cm diameter springform pan with baking paper and press the base evenly.
- For the filling, mix cream cheese, yogurt, sugar, vanilla sugar and lime zest in a bowl until smooth.
- Mix the gelatin powder with the lime juice in a small bowl and quickly add to the yogurt mixture. If you use gelatine leaves, soften them first and then dissolve them in the warmed lime juice.
- Spread the cream evenly over the base and place the lime yogurt cake in the refrigerator without baking for at least 5 hours.
- Garnish with whipped cream and lime slices if desired and enjoy!
Low-carb no-bake chocolate yogurt cake
Just because you're on a diet or watching your diet doesn't mean you have to miss out on a delicious dessert. Wonderfully light, irresistibly delicious and 200 calories per serving - this low-carb no-bake chocolate yogurt cake is the perfect, healthy treat.
Ingredients for 8-10 servings:
- 1.4 kg Greek yogurt
- 12 gelatin sheets
- 150 grams of cream
- 40 grams of cocoa powder
- 150 Gramm Erythrit
- 1 tbsp Vanilla extract
Preparation:
- Pour cold water over the gelatine leaves in a bowl and soak for 5-6 minutes.
- Heat cream in the microwave for 30 seconds.
- Squeeze out the gelatine leaves, add them to the cream and stir with a whisk until smooth.
- Mix the yogurt, erythritol and vanilla extract in a large bowl with a hand mixer for 3-4 minutes until smooth.
- Gradually add the cream mixture slowly and stir until smooth.
- Divide the mixture into 2 parts and mix one half with the cocoa powder until smooth.
- Line a 20 cm diameter springform pan with baking paper and pour the yoghurt mixtures into it alternately.
- Place in the refrigerator for at least 6 hours or overnight.

Easy no-bake yogurt cake
And finally, a recipe for a super simple and really delicious no-bake yogurt cake. Prepared in 10 minutes with no fuss and super fresh - this dessert is sure to impress everyone.
Ingredients base:
- 280 grams of chocolate cookies
- 30 grams of brown sugar
- 170 grams butter, melted
Yoghurt cream:
- 700 grams of Greek yogurt
- 60 ml milk
- 50 grams of powdered sugar
- 300 grams of cream
- 20 Gramm Gelatinepulver
Preparation:
- For the base, finely chop the chocolate biscuits with a rolling pin or in a mixer.
- Mix the ground cookies, butter and brown sugar into a sticky mixture and spread it on the bottom of a baking pan lined with baking paper.
- Soak the gelatine in a bowl in cold water and let it steep for 10 minutes.
- In the meantime, heat the milk, add the gelatine and stir with a whisk until smooth. Allow to cool slightly.
- Beat the cream and powdered sugar in a bowl with a hand mixer for 3-4 minutes until stiff.
- Mix the yogurt and milk in a separate bowl and carefully fold in the cream.
- Spread the cream on the base and put it in the fridge for at least 5 hours.
- Garnish the no-bake yogurt cake with melted chocolate or fresh fruit as desired and enjoy.
