Simple Mexican cream soup with kidney beans
Ingredients:
1 onion, sliced
2 cloves of garlic, minced
2 tsp cumin
2 cans of kidney beans
280 g enchilada sauce
2 cubes of vegetable bouillon
¼ cup chopped cilantro
Briefly fry the onion and garlic until translucent, add the remaining ingredients, bring to the boil and simmer for about 15 minutes. Remove from heat and let cool. Then puree with the hand blender. Sprinkle with fresh coriander when serving.

2 tbsp olive oil
