Baking recipes for cakes - try the Polish “Babka” for Easter!

In Eastern Europe there are really delicious baking recipes for cakes - one of them is called “Babka”, which means “grandmother”, and comes from Poland. This dessert is so named because of its shape, which resembles a woman's skirt. It is often blessed in church before consumption.

  • 2 cups warm milk
  • 5 packets of dry yeast
  • 1 1/2 cups sugar
  • 1 tsp sugar
  • 7 cups flour
  • 2 tsp flour
  • 1 tsp salt
  • 1 tbsp grated lemon peel
  • 3/4 cup raisins
  • 1 TL Vanilleextrakt
  • 10 egg yolks, lightly beaten
  • 3 large eggs
  • 1/2 cup melted, unsalted butter
  • 1 teaspoon melted, unsalted butter

Preparation of babka

Dough: Grease a large bowl with oil and set aside. Mix the milk, yeast, 1 teaspoon sugar and 1 cup flour in a small bowl and set aside. In another bowl, combine the remaining 6 cups flour, remaining sugar, salt, lemon zest, and raisins. Knead the vanilla, egg yolk, two eggs and the yeast dough together on a low level (approx. 10 minutes until a smooth dough is formed). Add the half cup butter and knead for another 5 minutes. Place the dough in the prepared, greased bowl, cover with a clean kitchen towel and let rise in a warm place for about 1 hour until it doubles in size.

Shape the dough

Form the dough: Grease two 10 cm deep baking tins with a circumference of 20 cm and dust them with the two teaspoons of flour. Then knock out the excess flour. Set aside. Remove the dough from the bowl and divide it into two parts on a lightly floured surface. Form both parts into balls and place in the prepared baking pans. Cover again with a kitchen towel and let rise in a warm place for about 1 hour until they double in size. Preheat the oven to 175 degrees.

Bake the dough: Break the remaining eggs and brush them on the babkas. Bake on the middle rack for 15 minutes. Lower the temperature to 150 degrees and continue baking until the babkas turn golden brown and sound hollow when tapped (about 40 minutes). Remove the finished babkas from the molds to cool.
