Dandelion honey recipe without sugar: Make your own tart, fruity syrup from dandelion flowers!

Dandelion grows as a wild plant in nature and also likes to spread in the home garden. What hobby gardeners call a weed is actually a medicinal herb whose flowers are rich in vitamins. You can make your own aromatic dandelion syrup from this. It is a healthy substitute for bee honey and is popularly known as dandelion honey because of its golden brown color and thick consistency. Dandelion honey recipe: That's why the vegan syrup is so healthy

In the month of May the dandelions bloom vigorously. Now is the right time to harvest the medicinal herb and process the fresh flowers into dandelion honey. Pick the flowers together with the stems and then pluck only the yellow petals from the green calyxes (the last ones have a slightly bitter taste). To sweeten, you can use healthy sweeteners such as pear or apple syrup. You still need sterilized screw-top jars.

Make your own healthy dandelion syrup: the necessary ingredients

  • 100 g fresh dandelion flowers (yellow petals only)
  • Half of an organic lemon
  • 2 tsp orange juice, freshly squeezed
  • 600 ml water
  • 8 El Apfeldicksaft

The dandelion honey recipe

1. Pick the dandelion flowers, separate the yellow flowers from the green flowers and wipe well under running water.

2. Place the flowers in a large pot and pour the water over them. Pour orange juice into the pot. Clean and wash the organic lemon well, cut into slices and add to the pot. Let it steep for about 100 minutes.

3. Use a wooden spoon to carefully press down the flowers and lemon slices. Then bring the mixture to a boil and cook for 10 minutes. Remove the pot from the heat and let the syrup steep overnight, covered.

4. The next morning, strain the mixture through a cheesecloth, removing the petals and lemon slices. Pour the apple syrup into the pot and simmer the liquid over low heat for about 3 hours until the syrup thickens. Stir occasionally and test the consistency from time to time. Put a tablespoon of dandelion honey on a plate and check whether it has a thick consistency like bee honey.

5. Fill the hot dandelion honey into the screw-top jars and sterilize.
