The recipe for shiny glaze with a mirror effect
Originally designed by the extremely talented pastry chef Olga Noskova, the recipe for Mirror Glaze Torte is extremely simple and can be made in under 20 minuteseven by beginnersprepare. In the past two years, the Russian has caused a sensation online with her mirror cake, and numerous chefs have popularized her idea around the world. And although the shiny glaze actually looks really nice, initially only a few baking enthusiasts dared to test the recipe at home. Preparation time: 40 minutes.
Ingredients:
- 20 grams gelatin, ground (usually this is 3 packs of gelatin)
- 270 grams of water
- 300 grams of white chocolate
- 200 grams of sweetened condensed milk
- 300 grams of sugar, glucose fruit syrup, food coloring (the quickest way is with gel coloring), cake.
- NB: You definitely need a liquid thermometer to prepare it!
First spread a layer of ganache on the mirror cake
Preparation:The first step is preparing the cake. Depending on your personal preferences, this is carefully painted with two layers of ganache/cream - making sure that the surface is as smooth as possible. Unevenness can be seen immediately under the mirror glaze and the desired effect simply cannot be achieved. At the end, leave the cake in the fridge for 3-4 hours and take it out again immediately before covering it with glaze. It is very important that the cake is well cooled.
Let it sit in the fridge and prepare the shiny glaze in the meantime
Second step – In a small bowl, pour 120 grams of water and then carefully add the gelatin. Stir slowly and let steep for 15 minutes. In a medium bowl, mix the white chocolate, condensed milk and gelatin. Meanwhile, in a small pot, add 150 grams of water, 300 grams of sugar and the glucose fruit syrup and cook to 103 degrees. When the mixture reaches 103 degrees (test with a thermometer), remove from the heat and pour into the pot with the white chocolate. Wait until the chocolate starts to melt. Then puree the mixture finely - be careful not to form any bubbles in the mixture. Then sieve the mixture finely and color it as desired.
Color the glaze
Third step - coloring: distribute the mixture into bowls/cups - one color is added to each cup accordingly. Then cover each cup with plastic wrap and wait until the mixture cools to 35 degrees. It is very important that the mixture reaches exactly 35 degrees - if it is hotter, it will have a too liquid consistency. The glaze will then run off quickly and only partially coat the cake. If it gets colder than 35 degrees, it will have too thick a consistency and won't coat the cake well enough. Unevenness occurs on the surface.
Cover the mirror cake with the glaze
Fourth step: Coating: place a baking tray on the worktop and place a grill rack on top. Place the now cooled cake on the rack. Pour the glaze onto the cake very carefully. If the icing is the right consistency, it will spread evenly over the cake. Several colors can be poured one after the other or simply mixed in a cup - this is how the marble effect is created.
Decorate the finished cake imaginatively
Step Five: Decorate: When it comes to cake decorating, imagination is the limitno limits set. A cookie cutter can be used to create different shapes out of fondant or marzipan - so even inexperienced cooks can make sugar flowers themselves.
