Tired of tomatoes, cucumbers and peppers in summer? The next salad is a delicious alternative and scores with a classic taste and a fruity note. Grandma's carrot salad with apple and lemon can be prepared quickly and easily in the Thermomix - just the thing for the end of summer!
Anyone who has ever tried grandma's carrot salad is enthusiastic about the classic. Fresh, crispy, prepared with seasonal fruit and vegetables - the salad fascinates with a successful combination of flavors. In the next recipe, the classic recipe gets a modern twist. The carrot salad really tastes best with a dressing made from lemon juice, honey and mustard seeds. There are also crunchy walnuts or sunflower seeds. Of course, the secret ingredient – raisins or dried cranberries – should not be missing.
The ingredients for 6 servings:
- 1kg carrots
- 1 bunch of spring onions
- 1/2 bunch of parsley
- 2 tsp ground coriander
- 2 medium apples
- a handful of raisins or dried cranberries (secret ingredient)
- a handful of sunflower seeds or walnuts
Dressing:
- 2 tsp olive oil
- 2 tsp lemon juice
- 1 TL Honig
- 1/2 TL Senfmehl
- Salt and pepper to taste
Prepare the carrot salad in the Thermomix
The preparation is extremely simple and uncomplicated. To make it really quicker, you can prepare the salad in the Thermomix. For this purpose:
1. Peel, halve and core the apples, clean and rinse the spring onions. Peel and clean the carrots and rinse them under running water.
2. Quarter the apples and carrots and chop the spring onions large.
3. First add the carrots and then the apples to the mixing bowl. Then add the spring onions and parsley.
4. Mix the whole thing for 5 seconds on level 5. Do not exceed this time, otherwise the vegetables will be pureed.
5. Place the dressing ingredients in a bowl and mix well.
6. Don't season the salad at first and keep it cold. Just before serving, drizzle with the dressing and garnish with the walnuts or sunflower seeds. Add the raisins or dried cranberries at the end.
Some preparation tips
Apple variety:Take apples of the “Pink Lady” variety; they taste wonderfully sweet and give the salad a refreshing, fruity note.
Slice vegetables in the Thermomix:For optimal taste, the carrots should be chopped. The quickest way to do this is with the Thermomix. Use the vegetable styler for thick shreds. Set the device to level 4 or 5 to chop herbs, vegetables and pome fruits.
Mustard flour or mustard seeds?Mustard flour is made from ground mustard seeds. If you add finely ground herbs to it, the end product is called mustard powder and is actually a spice mixture. We recommend using mustard flour or mustard powder. If you can't find mustard flour or mustard powder in the supermarket, you can replace them with Dijon mustard. Simply add 1/3 teaspoon Dijon mustard to the other dressing ingredients.
Raisins or dried cranberries?Whether you add raisins or dried cranberries to the salad depends primarily on your personal preferences. However, if you choose a salad without raisins and cranberries, then add 2 teaspoons of honey to the dressing.
Which nuts or seeds go with it?Walnuts, sunflower seeds and almonds go perfectly with the salad.
Can you prepare the salad a day in advance?In principle, this is possible if you just cut apples and carrots and sprinkle them with lemon juice or pineapple juice. In this case, add less lemon juice to the dressing the next day.
