Summer sheet cake with ricotta and fruit: a delicious treat

Cooking can be a challenge on hot summer days. We often resort to itquick and easy dishes like saladsor sandwiches. But even in summer we don't want to go without a piece of cake, right? This ricotta sheet cake with summer fruits is the perfect solution if you are entertaining several people at a garden party, for example. It is also very light, fresh and full of summer flavors.

Ingredients:

  • 125g butter, at room temperature
  • 200 g fine granulated sugar
  • 1 packet of vanilla sugar
  • 4 Owner
  • 330 g Ricotta
  • 225 g Flour
  • 1 packet of baking powder
  • 2 tbsp dried thyme (optional)
  • The zest of 1 ½ large lemons
  • Summer fruits (according to availability and preference): peaches, nectarines, apricots, plums, raspberries, blackberries, blueberries, cherries, strawberries
  • Powdered sugar for sprinkling

Preparation:

Preheat the oven to 180 °C (top and bottom heat). Line the baking tray with baking paper.

Prepare the fruit: first wash them thoroughly, core the peaches, nectarines, apricots and plums and cut them into wedges.Also pit the cherriesIf necessary, halve large berries.

Beat the butter with the granulated sugar and vanilla sugar until creamy. Add the eggs one at a time, mixing each egg thoroughly. Stir in the lemon zest and then the ricotta.

Sift the flour and baking powder into the bowl and gently fold it in along with the thyme until a thick and smooth dough forms.

Pour the dough into the prepared baking pan and smooth it out evenly. Spread the summer fruit over the dough without pressing it. Bake the cake until golden brown and cooked through, about 50-55 minutes.

Remove the cake from the oven and let it cool to room temperature in the pan. Before serving, sprinkle with powdered sugar and then cut into wedges.
