New Year's Eve food ideas - interesting dip for crackers

Ingredients:
3 x 250 grams of cream cheese
1 cup shredded cheddar cheese
1½ tablespoons pesto
¼ cup shredded bacon
grated Parmesan for rolling
Peppercorns for the eyes, mouth and buttons
Leek leaf for scarf
a sprig of herbs for the arms
a carrot for nose
3 slices of bread for the hat
toothpick

Preparation:
1. In a small bowl, mix 250 grams cream cheese, 1/3 cup grated Parmesan cheese and pesto.
2. In another bowl, combine 500 grams cream cheese, 2/3 cup cheddar cheese and shredded bacon.
3. Form each mixture into two balls, one large and one small. They won't be perfect yet because the cheese is too soft, so it needs to be put in the freezer for about 15 minutes.
4. Then roll the cheese balls in grated Parmesan cheese. Attach the small ball to the larger one using toothpicks to form the snowman's body.
5. Make the eyes, mouth and buttons with the peppercorns.
6. Place the carrot in the middle of the face for the nose.
7. Make the arms with thyme twigs and the scarf with a leek leaf. Make a hat out of three slices of bread like in the picture above.
8. Store in the refrigerator until ready to serve.
9. Serve with pretzels, crackers and vegetables.

Tartlets with goat cheese and onions caramelized in red wine

Preparation time: 30 minutes
Cooking time: 30 minutes
Total: 1 hour
Ingredients for 8 tartlets:
3 onions thinly sliced
3 tbsp olive oil
1 cup of red wine
3 tbsp brown sugar
3-4 sprigs of thyme and a few extra for garnish
Salt & Pepper
2 sheets of puff pastry 23 cm x 23 cm
200g goat cheese (25g per tartlet)
Dash of milk to brush the dough

Preparation:
1. Heat the oil in a skillet and sauté the onions over low heat until soft but not browned, about 15 minutes.
2. Add 1/2 red wine and deglaze the pan so that all the liquid has evaporated.
3. Add the sugar, thyme, salt and pepper and cook for another 5 minutes.
4. Add the rest of the red wine, continue to cook and stir until the liquid has evaporated.
5. Place the puff pastry on a floured work surface and cut out the circles to the desired size. You could also cut the dough into 4cm squares. This way you can use the puff pastry optimally and without wasting it. This recipe makes 8 tarts that are 8cm in diameter.
6. Cut out the inside of the dough with a small cutter or knife to create a small edge.
7. Brush the edge of each tart lightly with milk or egg-milk mix and bake in a preheated oven at 180 degrees for 10 minutes.
8. Remove from the oven and press on the inner circle so that the bottom falls down. Fill each tartlet with the caramelized onions.
9. Place a slice of goat cheese on the onion and sprinkle fresh thyme leaves. Bake in the oven for another 20 minutes.

New Year’s Eve food – bake mini pizzas in muffin tins

Ingredients:
3/4 cup flour
3/4 tsp baking powder
1/2 tsp dried oregano
3/4 cup milk
1 egg, lightly beaten
120 grams mozzarella cheese, shredded (about 1 cup)
120 grams pepperoni, diced (about 1 cup)
1/2 cup pizza sauce (homemade or purchased)
2 tablespoons fresh basil, finely diced

Preparation:
Preheat oven to 190 degrees. Grease a 24-cup muffin tin. In a large bowl, mix the flour, baking powder and oregano. Add to the milk and egg mixture. Add the mozzarella and salami. Let stand for 10 minutes.
Stir the dough and distribute it into the muffin tins. Bake for 20 to 25 minutes.
Heat the pizza sauce and add a tablespoon of basil. Sprinkle the pizza muffins with the remaining basil. Serve with the pizza sauce for dipping.

New Year's Eve food - sausages in a dressing gown for the New Year's Eve party

Ingredients:
60 mini sausages
Cheddar cheese, cut into small pieces
Caramelized onions, optional
1 large egg
All-purpose flour, for countertop use
500 grams of frozen puff pastry, thawed
Poppy seeds, sesame or mustard seeds, optional
Mustard, for serving
Ketchup, for serving

Preparation:
1. Cut the sausages 3/4 of the way down the middle and place a piece of cheese or 1/2 teaspoon of caramelized onion in the slit. If you don't like cheese or onions, simply prick the sausages several times with the tip of a knife.

2. Place a sheet of puff pastry on a lightly floured work surface. It should result in a 35 x 28 centimeter rectangle. Cut lengthways into 7 4 centimeter wide strips. Cut the individual strips crosswise into 4 rectangles, each about 9 long.

3. In a small bowl, beat together an egg and 1 tablespoon of water and set aside. Line the baking tray with baking paper. Place a sausage on the narrow end of the dough and roll. Brush with some of the egg-water mixture and sprinkle with seeds. Place on the baking sheet. Repeat the process with the remaining sausages. Let rest in the fridge for 15 minutes.
4. Preheat oven to 230 degrees and bake for about 20 minutes. Let cool and serve with mustard and ketchup.

New Year’s Eve food – cocktail meatballs

Ingredients for 10
500 grams of minced lean beef
1 No
2 tbsp water
1/2 cup breadcrumbs
3 tbsp onion, finely chopped
1 Dose Cranberry-Sauce
3/4 Cup Chili-Sauce
1 tbsp brown sugar
1 1/2 tsp lemon juice

Preparation time 20 min
Cooking time 85 minutes
Ready in 105 mins

1. Preheat oven to 175 degrees.
2. In a large bowl, combine the ground beef, egg, water, breadcrumbs and chopped onion. Roll small meatballs.
3. Bake in the preheated oven for 20 to 25 minutes, turning once.
4. In a Dutch oven or large pot, add cranberry sauce, chili sauce, brown sugar and lemon juice. Add the meatballs and cook for 1 hour before serving.

Mushrooms stuffed with Parmegano and herbs

Ingredients:

24 small mushroom caps (keep the stems)
2 tsp minced garlic
3 THE Panko Paniermehl
1 teaspoon parsley
1/8 tsp Italian herb mix
3 tablespoons finely grated cheese such as Parmesan
2 tablespoons grated cheese such as mozzarella
Salt, black pepper, ground red pepper to taste
olive oil

Tips: Mushrooms work best for this recipe. You can also use other cheeses like Pecorino Romano instead of Parmesan or Gorgonzola or Gouda instead of Mozzarella. You can also add spicy Italian sausage – just use less breadcrumbs and olive oil. When serving, you can drizzle a little balsamic vinegar over the mushrooms.

Preheat oven to 200 degrees. Wash mushrooms and remove stems. Cut the stems into small pieces. Combine everything except the cheese in a bowl.

Sauté mixture over medium heat in a small amount of olive oil just until the scents are released.

Pour the sautéed mixture into the bowl and add the cheese. Fill the mushroom caps generously with the mixture and bake in the oven at 200 degrees for 10 to 12 minutes.
