Ingredients for 4 servings

  • 1.3 kg sweet potatoes
  • 400 grams of diced canned tomatoes or fresh cherry tomatoes
  • 250 grams of feta
  • 30 ml olive oil
  • 40 grams pine nuts (optional, but highly recommended)
  • 1/3 bunch of fresh thyme
  • Salt and pepper to taste

preparation

  • Preheat the oven to 200 degrees.
  • Peel the sweet potatoes, halve them lengthwise and cut into thick slices.
  • Wash the thyme and pick the leaves.
  • Combine thyme leaves, olive oil and salt and pepper in a small bowl.
  • Place the sweet potatoes with the oil mixture in a baking dish and mix well.
  • Bake for about 20 minutes and remove from the oven.
  • Top with tomatoes and sprinkle the feta on top.
  • If using, sprinkle pine nuts on top and bake for another 12-15 minutes.
  • Allow to cool slightly and voilà – your aromatic sweet potato casserole with feta is ready.

Sweet potato casserole with minced meat and feta

Ingredients for 4 servings

  • 600 grams of sweet potatoes
  • 450 grams of mixed minced meat
  • 1 medium onion
  • 3 cloves of garlic
  • 20 grams of tomato paste
  • 200 grams of feta
  • 150 ml Sahne
  • 130 grams grated mozzarella
  • 1 tbsp dried oregano
  • Salt and pepper

preparation

  • Peel the sweet potatoes and cook in boiling salted water for about 20 minutes.
  • Meanwhile, heat some olive oil in a pan over medium heat and fry the minced meat for 4-5 minutes, stirring occasionally.
  • Chop the onions and garlic cloves finely, add them to the pan and fry for 1-2 minutes.
  • Add tomato paste and oregano and season with salt and pepper.
  • Preheat the oven to 200 degrees.
  • Cut the sweet potatoes into rings and put half of them in a baking dish.
  • Spread half of the minced meat mixture and the feta over it and repeat the process again.
  • Then pour the cream over it and sprinkle with mozzarella.
  • Bake the sweet potato casserole with minced meat and feta for about 20 minutes.
