Toasts with sweet potatoes, avocado and egg
Have you ever tried sweet potatoes and avocado? It issuper tasty and healthy. You can make this toast yourself and delight your family for breakfast.
Ingredients:
- 1 large sweet potato
- 1 tablespoon extra virgin olive oil, coconut oil or avocado oil of your choice
- Sea salt and black pepper to taste
- 1/4 teaspoon crushed dry oregano or rosemary (optional)
- 2 boiled eggs
- 1 large avocado
- a splash of fresh lemon juice
- 1/2 tablespoon sesame seeds
- a pinch of chili powder (optional)
Instructions for preparation:
- Preheat the oven to 175 degrees and line a baking sheet with parchment paper.
- On a cutting board, cut the sweet potato in half (vertically), then cut each half lengthwise once or twice, depending on how thick the potato is.
- Pour the olive oil (or oil of your choice) onto the cutting board and coat both sides.
- Bake them for about 30-35 minutes.
- In a bowl, mash the avocado with a fork and season with lemon, sea salt and black pepper.
- While the potatoes are baking, boil water and add the eggs. It takes about 5 minutes for a soft-boiled egg and 7 minutes for a hard-boiled egg.
- If you want your potato slices extra crispy, finish them in the toaster on low. Top them with egg slices. Finally, sprinkle sesame seeds for a little crunch and chili powder for a gentle, subtle heat and flavor. Bon appetit!
Sweet potato toast with bacon & eggs

Ingredients for 1 serving:
- 1 sweet potato
- 2 slices bacon, cooked
- 2 eggs, scrambled eggs
- Salt, to taste
- Pepper, to taste

Preparation:
- Cut sweet potato into thin slices, about 6mm thick.
- Place in the toaster and set for maximum cooking time. When the toaster pops up, flip the sweet potato slices over and toast 1 more time.
- Remove from the toaster and let cool enough to handle.
- Mix eggs with salt and pepper.
- Place two slices of cooked bacon on the sweet potato toast. Top with the scrambled eggs.
