Make your own Viennese cake base – a delicious sponge cake base
Would you like a quick andMake your own simple cake base, then this cake base recipe is right for you. It is a so-called sponge cake base that only requires a few ingredients and doesn't take much time to prepare. After you bake the crust, you can use it as a base for any cake. You can make the light base with the following ingredients.
– 60 g Flour
– 3 Owner
– 100g sugar
– 80 g white chocolate coating
– 50 g Butter
– 30 g cornstarch
– 1/2 tsp baking powder

Preheat oven to 175 degrees. The white chocolate coating is melted together with the butter in a water bath. Separate the egg whites and yellows and beat the egg whites until stiff. In a separate bowl, beat the egg yolks with the sugar and stir in the melted chocolate and butter. Then add the egg whites and sift the flour and cornstarch over it, then stir everything together. Bake the finished cake dough in a greased springform pan or one lined with baking paper for 30 minutes. You can also use the recipe if you want a fruit base. You are welcome to cut the cake base and prepare small appetizers.
Dark biscuit base
You can make a chocolate base with either cocoa or couverture, or dark chocolate as an ingredient. For example, you can use the recipe above and simply replace the white chocolate coating with dark one. You can then further process the finished base with any cream you like. We would like to introduce you to another recipe variant below.
– 2 egg whites
– 2 egg yolks
– 2 tbsp lukewarm water
– 75g sugar
– 60 g Flour
– 15 g Kakao
– 1 packet of vanilla sugar
– 25 g cornstarch
– 1 level teaspoon of baking powder
Bake the cake base
The egg whites are beaten until stiff with the mixer. In another bowl, mix the egg yolks and water until foamy, then gradually add the sugar and vanilla sugar. A thick foam is created. Mix the flour, cocoa, baking powder and extra cornstarch and then sift over the egg yolks. Stir with a spoon. Then fold in half of the snow, then stir in the rest and work everything into an airy dough. Bake in a preheated oven at 180 degrees for 20 to 25 minutes (top and bottom heat).
Quick and easy recipe
You can also bake a dark base with just four ingredients. Melt 125 g butter and 125 g dark couverture in a water bath. In the meantime, mix 3 eggs with 50 g sugar. Add the melted butter couverture and mix everything together. Grease a baking pan and fill it with the dough. Tap the mold on the counter a few times to remove any bubbles. Bake at 180 degrees for 20 minutes. This moist cake base can also be served as a simple chocolate cake. You can also use it to make a cake. Since the base itself is quite sweet, the sugar should be used more sparingly in the creams, toppings or cream for spreadingthe cakewon't be too sweet.
Recipe with quark
– 150 g Quark
– 300 g Flour
– 6 tbsp milk

If you want a curd cake base, this can be done quickly with little effort. The above ingredients are mixed into a dough with a mixer. Grease a baking pan that can be either round or square. Pour the dough into the baking pan and bake for about 20 minutes at 175 degrees.
Shortcrust pastry base
– 150 g Flour
– 60 g butter or margarine
– 60g sugar
– 1 No
– 1 tsp baking powder
The cake will be particularly delicious if you make your own shortcrust cake base. The ingredients are best made into a dough by kneading by hand or with the dough hook of a mixer. This is then rolled out to the size of the baking pan. A baking pan for pie, for example, is well suited. Grease the pan, pour the dough into it and bake at 175 to 200 degrees until the dough turns golden brown.
Cake base without baking
A delicious cake base doesn't always have to be baked. Yes, there are wonderful options for no-bake crusts by simply making them from cookies. Since no raw ingredients are used for such a base, baking is unnecessary, which saves you a lot of time during preparation. The finished dough is simply placed in the refrigerator or freezer to firm up.
Dark cookie base without baking
– 125 g butter biscuits
– 60 g Butter
– 50 g dark chocolate or couverture
Melt the chocolate in a water bath. Meanwhile, crumble the cookies in a bowl. Add the melted chocolate to the soft butter, mix and then stir in the cookies. Then put this “dough” into a baking pan, spreading it evenly and pressing it in at the same time. Place the mold in the refrigerator for 30 minutes. Then you can prepare any tart or cake with a shortbread base. If you would like to make a light cookie base instead, simply leave out the chocolate.
How to make ladyfingers cake base
You can also make a ladyfingers cake base in the same way. Crumble 150g ladyfingers. To do this, you can put them in a freezer bag, seal or tie it, and then use a rolling pin or other heavy object to pound the biscuits. Melt the butter and add the crumbs. Mix everything together, pour the dough into a mold and put it in the fridge instead of baking the cookie base.
Simply prepare cake base from cornflakes
A cornflake cake base is also prepared without baking, again using the same principle. Use unsweetened cornflakes. You will need 2 cups of this. Crumble them and then mix them with 125g melted butter and 75g sugar. Put everything in a mold and chill.
Quickly make your own cake base from puffed rice
For a puffed rice base, melt 50 g butter and 1 tbsp honey or syrup, as well as 200 g white or brown chocolate. Then stir 50 g of puffed rice into this mixture. Once you have put the mixture into a mold, you can chill it again until the base is firm. As you can see, many different dry ingredients can be used - without baking.
No-bake base with Amarettini
Who doesn't love these aromatic Italian cookies? They give the entire cake base a pleasant aroma that whets the appetite. 125 g butter is melted in a water bath and 200 g Amarettini are crumbled in a freezer bag. Grease the edge of a springform pan and line the bottom with baking paper. Then mix both ingredients and spread in the mold. Chill for at least 10 minutes.
Nut cake base with hazelnuts
– 75g sugar
– 100 g soft butter
– 3 Owner
– 150 g ground hazelnuts
– 1/2 tsp baking powder
You can bake this nutty base by first creaming the butter and sugar for 8 minutes. The butter will become noticeably lighter. Gradually stir in the eggs. Mix the nuts and baking powder and stir this mixture in too. Put the dough into a springform pan (18 cm), which you have previously lined with baking paper. Add the dough and bake at 160 degrees (fan oven) for 40 to 45 minutes.
Bake vegan cake base without eggs
– 225 g Flour
– 175g sugar
– 250 ml water
– 4 tsp baking powder
– 6 tbsp vegetable oil
– 1 packet of vanilla sugar
All ingredients are stirred into a dough that becomes quite liquid. You shouldn't stir for too long, otherwise the dough will become very sticky. Bake for 20 to 30 minutes at 175 degrees top and bottom heat. After you bake the cake base, you can add vegan cream to it in any way you like.
Gluten free cake recipes
– 125 g Butter
– 100g sugar
– 170 g light, gluten-free flour
– 1 to 2 tbsp lactose-free milk
– 2 Owner
– 1 packet of bourbon vanilla sugar
– 1/2 tsp ground psyllium husk
– 1 TL Weinsteinbackpulver
Bake the base by first stirring the butter, sugar, vanilla sugar and salt until fluffy. Then gradually add the eggs and milk. Mix the flour, cream of tartar and psyllium husk in a separate bowl and add it to the butter mixture. Put the dough in a greased tin and bake for 20 minutes at 175 degrees.

– 50 g soft butter
– 3 Owner
– 170 g ground almonds
– 30 g Mandelmehl
– 1 TL Johannisbrotkernmehl
– 1 tsp baking powder
– 80 g Xylit
– 1 Prise Vanillepulver
Prepare a greased 28cm diameter baking pan. Beat eggs and butter until fluffy. Mix the almonds, almond flour, locust bean gum, baking powder, xylitol and extra vanilla powder and then add to the eggs. Sprinkle the mold with ground almonds and pour the dough over it. Bake at 160 degrees for 15 minutes.
