Watermelon recipes: delicious soup with yogurt and cucumber

For the soup pictured above you need the following ingredients: 6 cups diced watermelon, 1-2 cups diced cucumber, lime juice, 1 tablespoon finely chopped green shallots, 1 shallot cut into four larger pieces, 1 jalapeño pepper, 1 cup cold water, 12 strips orange peel, 1/2 cup orange juice, 1 tablespoon fresh ginger, crushed, 1/2 tablespoon kosher salt, 2 tbsp finely chopped mint, 6 tbsp yogurt
Preparation time: 40 minutes, then leave in the fridge for 2 hours. Preparation: Mix 1 cup of diced watermelon with the cucumber, 2 tablespoons of lime juice and the finely chopped shallots. Cover the pot and leave in the refrigerator for 2 hours. Then in a blender, finely puree the remaining watermelon with 4 tablespoons of lime juice, the shallot, the jalapeño pepper, water, orange juice and orange peel. Store the resulting soup separately in the refrigerator. Just before serving, mix the first pot with the chopped ingredients and the second pot. Prepare the soup just before eating.
Delicious salad with olives and feta
International cuisine presents an exciting mix from different regions around the world. The salad with olives and feta cheese is a delicious experiment - inspired by traditional Greek salads. Ingredients: 1 medium-sized watermelon, 8-10 medium-sized pitted black olives, 2 tablespoons feta cheese, 1/4 cup freshly chopped mint, for the dressing you also need: 2 tablespoons lemon juice, 1 pinch of pepper, 6-7 finely chopped oregano stalks, 6- 7 finely chopped parsley stalks, 2 tablespoons virgin olive oil.
Preparation: First dice the watermelon, then mix it in a bowl with the olives, mint and cheese. For the dressing – first mix the lemon juice, pepper, oregano and parsley, then add the olive oil. Serve immediately after preparation.
Salad with watermelon and quinoa
It couldn't be more exotic - in the next recipe the watermelon is combined with kiwi, agave syrup and Inca grain. The mix tastes extremely delicious and brings a Mediterranean touch to the table. Perfect for the garden party in summer. Ingredients: 4 tablespoons agave syrup, 5 tablespoons fresh lemon juice, 4 tablespoons lemon peel, 1 tablespoon rice wine vinegar, pinch of salt, 2 cups black quinoa, 3 cups diced watermelon, 1 diced kiwi, 4 tablespoons coconut, 1/2 cup pecans.
Preparation: Mix the agave syrup together with 5 tablespoons of lemon juice, the lemon peel, 1 tablespoon of rice wine vinegar, salt and cooked quinoa and leave aside for 10 minutes. Add the watermelon, pecans, kiwi and coconut. Serve chilled.
Watermelon recipes: make your own ice cream
The next watermelon recipe will be specialbring joy to the children– Ice cream has a refreshing effect on the hot summer days and is a healthy and delicious alternative to birthday sweets. For the recipe you need 550 g watermelon, 2 kiwis, 75 g sugar, 1 lime, finely pureed.
First carefully cut the kiwis into thin slices, puree the remaining ingredients and mix together. Then divide the kiwis and the mixture into molds and leave them in the fridge for one night. Serve as a dessert at lunch the next day.
Alcoholic cocktail with sangria
Watermelon is traditionally one of the most popular ingredients in a cocktail. When the fruit is combined with limes, a pure fruity pleasure is created. Preparation time foreight drinks– 15 minutes. Ingredients – thick juice with mint (1/2 cup sugar, 1/2 cup water, 2 mint leaves), 8 cups finely pureed watermelon, 750ml white wine, 2 limes (1 lime for juice, 1 as decoration), 1/2 cups rum, Mint leaves.
Preparation – first prepare the thick juice with mint – mix all the ingredients and cook in a pot over medium heat for 10 minutes. Then remove from the heat and let cool. Carefully remove the mint leaves and store the mixture in the refrigerator. Thereafterthe watermelon juice with the wine, mix rum and lime juice. Add a little thick juice with mint.
Fruity drink with lime juice
Ingredients: 1 watermelon, 2 limes, 500ml sparkling water, 1 tablespoon sugar, 10 mint leaves, 10-15 ice cubes. Preparation – Prepare 450 g of watermelon juice and leave it in the freezer for 1 hour. Then puree finely in a blender together with the mint leaves, sparkling water and sugar.
