Zucchini cookies with chocolate chips and oat flakes: Healthy and still delicious

Ingredients

  • 120 g Allzweckmehl
  • 1/2 TL Natron
  • 1/4 tsp baking powder
  • 1/2 tsp salt
  • 1/2 ground cinnamon
  • 115g butter, softened
  • 50g sugar
  • 150g brown sugar
  • 1 large egg
  • 1 TL Vanilleextrakt
  • 120 g oat flakes
  • 180 g grated zucchini, squeezed
  • 170 g chocolate chips

preparation

  • Preheat the oven to 190°C.
  • Line two large baking sheets with parchment paper and set aside.
  • Grate the zucchini and squeeze out the water with your hands.
  • In a bowl, mix the flour, baking soda, baking powder, salt and cinnamon.
  • Place the softened butter, sugar and brown sugar in another bowl and beat with a mixer until light and fluffy.
  • Then add the egg and vanilla and continue mixing on medium speed for a minute.
  • Add the dry ingredients and continue beating on low speed.
  • Stir the oat flakes into the dough.
  • Add the chocolate chips and zucchini and mix well.
  • Form small balls out of the dough and place them on the prepared baking sheet.
  • Bake the zucchini cookies for 10 minutes, or until the top is set.
  • Let them rest on the baking sheet for 5 minutes before transferring to a wire rack to cool.
