Basic quiche dough recipe:

  • 250 grams of wheat flour
  • 125 grams butter, cold
  • 1 No

Onion quiche:

  • 250 grams of onions, finely diced
  • 140 grams bacon, finely diced

  • Fresh parsley for garnish

Preparation:

  • Place the ingredients for the quiche dough in a large bowl and knead vigorously with your hands to form a smooth dough.
  • Wrap in cling film and chill for 30 minutes.
  • In the meantime, heat olive oil in a pan over medium heat and fry onions for 4-5 minutes until translucent.
  • Add the bacon cubes and fry for another 3-4 minutes.
  • Grease a 28 cm diameter quiche mold with butter and preheat the oven to 160 degrees.
  • Roll out the quiche dough on a floured work surface, place it in the quiche mold and press the edges.
  • Prick the base several times with a fork.
  • Mix the onions and bacon with the cheddar and spread over the dough.
  • Whisk eggs and cream in a bowl and season with salt, pepper and nutmeg.
  • Pour the egg mixture into the mold and bake for 1 hour.
  • Garnish the onion quiche with fresh parsley and enjoy!

  • 300 grams of red onions
  • 200 grams of raw ham

  • 30 ml olive oil
  • 60 grams of cornstarch
  • 1/2 bunch of chives
  • 1 tsp ground cumin
  • Salt and pepper

Preparation:

  • Preheat the oven to 170 degrees and grease a quiche mold with butter.
  • Pour the dough into the tin, prick with a fork and blind bake for 10 minutes.
  • Halve the vegetable onions, put them in the mixing bowl and chop for 4 seconds/speed setting 5. Set aside.
  • Place the red onions in the mixing bowl and chop for 4 seconds/speed setting 5, pushing down with the spatula.

  • Add the remaining ingredients except the chives and stir for 15 seconds/counterclockwise/speed 4.
  • Pour the filling into the mold and bake for 50-60 minutes.
  • Sprinkle the onion quiche with chives and enjoy!
