Quick recipe: Autumnal sweet potato gnocchi with sage butter

Autumnal 30-minute recipe: This is how sweet potato gnocchi with sage butter works

Ingredients for 2 servings:

  • 3 medium sweet potatoes (approx. 230 g cooked flesh)
  • 75g flour (plus extra for shaping)
  • ½ tsp salt
  • 3-4 THE Butter
  • 6-7 sage leaves, chopped
  • Salt and pepper
  • Parmesan for serving

Preparation:

  1. Wash the sweet potatoes and prick them deeply at regular intervals. Cook in the microwave at the highest level (approx. 1000 watts) for approx. 5 minutes. Then turn the potatoes over and cook for another 3-5 minutes until they are soft.
  2. Remove the potato flesh from the peel with a spoon and place in a bowl with flour and salt.
  3. Knead everything with your hands until you get a soft dough. On a floured surface, roll into long ropes of dough and cut into 3 cm long pieces. Press these in with a fork to create the typical gnocchi grooves.
  4. Bring plenty of water to the boil and add enough salt. Simmer the gnocchi gently until they are cooked through and float to the surface. Then drain.
  5. Meanwhile, melt butter in a skillet until lightly browned. Meanwhile, cut the sage into strips and add to the butter.
  6. Add the finished gnocchi to the pan. Season everything with salt and pepper and fry in the butter for a few minutes until the gnocchi are crispy and golden.
  7. To serve, arrange on plates and sprinkle with grated Parmesan.

Tipp: As an alternative to preparing them in the microwave, you can also cook the sweet potatoesbake in the oven.To do this, fold the potatoes in some aluminum foil and cook them in a preheated oven at 200 degrees for about 30-40 minutes until they are soft.
