Baked apples are simply part of the Christmas season, like the scent of cinnamon and pine greens. But why just serve it as a dessert when you can also transform a cake into a real highlight with the sweet apple creation?

Our baked apple cheesecake combines the irresistible taste of juicy apples, cinnamon and caramel sugar with a creamy cheesecake base. Whether as a dessert for the Christmas menu or with Advent coffee: This cake brings the taste of baked apples directly to the cake plate and is guaranteed to make faces smile!

Recipe for creamy baked apple cheesecake

Ingredients:

  • 250 g Flour
  • 350g sugar
  • 2 packets of vanilla sugar
  • Salt
  • 150 g Butter
  • 1 THE BUTTER
  • 4 Owner (M)
  • 500 g low-fat quark
  • 500 g sour cream
  • 1 packet of vanilla pudding powder
  • 750 g tart apples
  • Juice of 1 lemon
  • 2 tbsp brown sugar
  • 1 tsp cinnamon
  • 50 ml dry white wine
  • 1 tsp cornstarch
  • 200g whipped cream
  • 1 packet of cream setting agent
  • 1 tbsp cocoa powder

Preparation:

1. Knead the flour, 150 g sugar, 1 packet of vanilla sugar, 1 pinch of salt, 150 g butter and 1 egg. Wrap the dough in foil and chill for about 30 minutes.

2. Mix the quark, 375 g sour cream, 200 g sugar, 3 eggs and pudding powder. Roll out the dough thinly on a floured work surface. Place in a springform pan (20 cm ø) that has been greased and dusted with flour and press on the bottom and edge. Cut off any excess dough.

3. Spread the quark mixture over the dough and smooth it out. Bake in a hot oven (electric stove: 200 °C, fan oven: 180 °C, gas: level 3) on the lower rack for about 55 minutes. Remove and let cool.

4. Peel, quarter, core and cut apples into pieces. Fry in 1 tablespoon butter and drizzle with lemon juice. Sprinkle brown sugar on top and let it melt. Season with cinnamon. Deglaze with wine and bring to the boil. Mix the starch with 1 tablespoon of water until smooth. Bind compote with it. Set aside and let cool.

5. Beat the cream with 1 packet of vanilla sugar and cream setter until stiff, fold into 125 g of sour cream. Spread apple compote on the cake. Spread with cream cream. star stencil (You can find it here on Amazon, for example*) place in the middle of the cake. Sieve the cocoa over it, remove the stencil.
